Foodies - isn't it great to be us? I mean really - food is one of the most divine ways to enjoy life don't you think? Plus there are so many amazing offerings from all over the world. You can be transported most anywhere will culinary tastes.
In honor of the upcoming Cinco de Mayo yet deviating from the classic Mexican version, I'm melding a few cultures into one for a really yum unique take on quesadillas.

None the less I am sticking with whole-foods as per usual, offering options to avoid dairy, gluten and nuts and letting you decide on the best wrap to use. These are so easy to make and give you lots of room for play. Kitchen creation is artistry at it's best. Not only do you transform the medium of food into magnificent new tastes, you get to artistically 'paint-plate' your creations any way you so desire and then sit down and enjoy. Oh yes!
I have learned - am learning the art of plating on plain plates (white is best most often), boards, slats, etc. rather than patterned or busy dinnerware. If you've taken to taking pictures of your creations keep this in mind.
Part of the sexiness of eating well is being flirted with/by the appearance of your food. Think temptation - sexy, bold, shameless and tantalizing.
Have you ever stolen glances of others plates in restaurants as servers buzz by your table with another diners menu items? I do this all the time. Yes, I am a food stalker and often what I see inspires my selection. We eat with our eyes first and our sense of smell. Engage all of your senses whether you are cooking yourself or enjoying another's creations. May I remind you to bring your whole-self to the table and enjoy your meals with mind-full awareness and appreciation for the entire orchestration of how your meal came to be. Many players are involved and all deserve your gratitude.
Here's to eating well and yes, finally... the recipe.
