
CHUNKY, GARLICY GUACAMOLE
A true gift from nature – the almighty avocado! You’ll find a rotating bunch of avocados in my kitchen most assuredly. After all – it’s truly so versatile, so yummy and bursting with nutrient density. The proverbial guacamole can be made many different ways.
This version here is one of my favorite ways to enjoy this dip yet stretch avocados a little with the added veggies when you’re feeding a crowd. I find them a bit pricey when visiting my sister in Nashville and this dip does go fast. It’s also great if you don’t have many ripe avocados on hand. Plus it cuts down on the caloric load if that matters to you.
INGREDIENTS:
2 – 3 medium to large, ripe avocados
½ small red onion, diced, approx ¼ cup
½ cup fresh organic tomato, seeded, diced and drained
½ cup organic red pepper, diced
1 - 2 tsp garlic, minced, to taste, more is fine
¼ cup cilantro, snipped, or more to taste
Fresh lemon or lime juice, 3 - 5 tbsp, to taste
1 tsp minced jalapeno, to taste (the seeds add the heat so omit if desired)
1 tsp cumin, optional
1 tsp chili powder or chipotle powder if you like it smoky and spicy, optional
½ - ¾ tsp fine grey sea salt, to taste
Freshly ground pepper

DIRECTIONS:
- Peel and dice or roughly mash avocados then combine with remaining ingredients and mix well.
- Taste and adjust seasonings to your preference, adding lemon, garlic or spices, etc to make you go “yum”. Now pair with tortilla chips, veggie dippers or top off a salad with a big spoonful. It's good anyway and extra special with this taco meat.
