MARGHERITA PIZZA – THE VEGAN WAY
 
Everyone needs a little pizza break in their life in my view and if it’s on your meal line-up often variations are needed. This creation was inspired simply because every time I see a traditional Margherita pizza in its perfect simplicity, I think, “oh, I need to make that." So I did!
 
While a great vegan feta cheese like the Violife from VeganSupply is a fabulous melting cheese, I wanted to give silken tofu a try.  Marinating slices of the tofu and seasoning well with dried herbs and the results warranted the familiar… "Oh so yummy", response.  Make this with vegan feta cheese or my protein-rich creation with silken Soyarie tofu!

SMOKY WALNUT MEAT TACOS

If you love sun-dried tomatoes and the richness of walnuts you’ll soon come to find they meld together perfectly for an earthy, rich and flavor carrying blend.  Make the tacos in the usual corn or flour tortilla wraps or enjoy raw wraps if you can find them.  A fave of mine  is www.livefoods.ca carried at some health food stores in Canada.  You can also  use lettuce leaves or make your own wraps. LATIN SCRAMBLE

When I was raising my son Jesse, Friday’s were a sacred pizza and movie night for our tripod family. Occasionally we’d deviate from pizza, and make over-loaded nachos. Dinners had to be fun, flavorful, nutrient infused and easy-to-eat from the coffee table.  Shifting away from spicy chorizo this scramble was created.  It’s great for tacos, salads, tostados and fills avocados perfectly.

SPICY ITALIAN STEW
 

Time is a hot commodity for most of us and this can make for meal management compromise.  If you’re committed to eating healthy you gotta be savvy when it comes to meal prep.  Make the most of your culinary creations by doubling recipes so you make two meals or more. This fabulously thick creation can be used in so many ways from an ‘as is’ stew to a topping for Stuffed Sweet Potatoes to pizza, pasta, tacos, veggie tortes or whatever you come up with.  Once you’ve made it, you’re sure to add it to the must make weekly list and keep a stash in the freezer for your 911 emergency meal needs.

MOROCCAN VEGGIE n QUINOA PILAF
 
Oh the fragrance and exotic taste infusions of Moroccan creations! The use of spices commonly found in Moroccan inspired fare is what makes it so appealing.  Have you ever put cinnamon in your savory food creations?  Well it just may become a habit for you. Comfort screams out from this pilaf (along with anti-inflammatory benefits). I like to stir in chickpeas that I've tossed in lemon infused olive oil and lemon pepper yet any bean you love will work if you love it.

CAULIFLOWER WALNUT TACOS
 
A wonderful vegan alternative to ground meat fabulous as is and with tacos, nachos, pizza, pasta, enchiladas, burritos, nachos or in Chili, Curries, soups etc…  Use to top salads, fill Nori wraps, soft organic corn or flour tortillas, collards, lettuce leaves and rice paper wrappers. Add shredded seasonal veggies, and guacamole, piccolo, salsa, pesto or my Cashew Cheddar cheese  for an amazing vegan meal everyone will love, meat eaters included.  For an easy appetizer spoon a little guacamole on tortilla chips, lettuce leaves, crackers, triangles of cabbage or peppers etc, then top with the crumble, sassy salsa and fresh cilantro.

SMOKEY, SPICY CHILI MOLE - Big Batch
 
Perfect make-ahead food for weekday meals, parties, weekends away, and freezer fare. I trust you’ll add it to your go-to recipes for it’s just a little different from many chili recipes out there with the richness the cacao adds.  Smokiness from chipotle and paprika powder are perfect in replacing a meaty flavor making this vegan version certain to win over sworn carnivores, so no need to mention it’s meatless. Let them love it without preconceived ideas of ‘vegan’ food being from another planet. Ha ha – just saying! This makes enough for a crowd and is perfect for make-ahead food prep as it freezes well. It's great as a dip for parties when served with tortilla chips or Mary's Crackers for a crunchy corn-free alternative.

PAN GRILLED PORTOBELLO BURGS
Yes my fellow foodies, you really can eat a plant-based diet and still have that grilled burger taste without the meat or a fake version of it.  Portobello mushrooms make for a fabulous, meaty texture and that familiar and beloved smoky grill taste. Even if you aren't grilling it. What you want to do is pan-grill in a cast iron pan. I have a fabulous one with the ridges yet a regular pan works well too.  Sear them on high and let caramelize. The smoky taste is there and it's delicious.

MAPLE N’ PESTO WILD SALMON BRÛLÉE
 
Salmon is the most popular fish choice for many so I just have to include a recipe here. This creation wins rave reviews and it’s really easy to put it together making it perfect for entertaining. You can even manage it on a week night. It's Paleo and keto friendly and for the plant-based eaters, extra-firm, pressed tofu cutlets are a fabulous alternative. That's my choice. Fish eaters look for wild, sustainably sourced coho or sockeye BC salmon.

SMOKY BLACK BEAN BURGERS
Your best delish burgers for steamy, hot summer picnics!
 Heading out for a picnic and want something everyone will love that can withstand the heat? This is it. These smoky burgers are perfect to pack up for lunch in the park, on the beach or out in the woods. Make n bake them in advance, freeze then pack directly into your cooler. From there they can be reheated on the grill.  Alternatively skip the freezer step and enjoy them from the cooler, hot or cold. You'll be impressed.

Exotically seductive, smoky tasting foods lure most every type of eater and this dish is sure to do just that.

Don’t order in, this is so much better and all you need is a creative mind and about 5 minutes prep time. Then it’s a fast assembly and a high heat blast in a smoking hot oven. Keep tortilla wraps or ready-made organic crusts in the freezer along with a quality vegan cheese as well as marina sauce or pesto and you’ve got the essentials. One recipe yields two vegan mains that will wow you and your family!
When it comes to feeding families fast, affordably and conveniently and fulfilling familiar longings for fun and comforting foods these two ace it!
