Serves 6 as an appetizer
A breeze to make in minute, impressive and ‘so much better’ than butter. Serve this as an appetizer or enjoy over pasta or your favorite salad mix.
Ingredients
- ¼ cup balsamic vinegar
- 1/3 – 1/2 cup olive oil
- 1 tsp garlic, minced
- 1¼ cup chopped sun-dried tomatoes, soaked to soften
- 1 medium tomato, chopped
- ¼ cup fresh basil leaves, snipped or minced
- 2 tbsp grated Parmesan cheese*
- Freshly ground pepper, to taste
- Organic baguette and fresh endive leaves, to serve
- *Feta cheese is also great – use with fresh oregano
Directions
1Pour vinegar and oil into a medium sized serving plate with sides. Gently stir in garlic and sun-dried tomatoes mixing ingredients together well.
2Spoon chopped tomato decoratively around the sides of the plate. Sprinkle with Parmesan cheese and chopped basil and top with freshly ground pepper to taste.
3Serve with sliced baguette and endive leaves as an appetizer or as a side dish for a healthy and flavor filled alternative to butter.
