Sushi Style Salad
Serves 4–6
Ingredients
- 3 cups fresh salad greens, your choice
- 1 cup Napa cabbage, finely chopped
- 1 cup red cabbage, finely chopped
- 1 Red pepper, cut into thin strips
- 1 Avocado, cut into thin strips
- Fresh herbs such as cilantro, parsley and sesame seeds, to garnish
Lemon Ginger Vinaigrette
Ingredients
- 2 tsp garlic, minced
- 6 tbsp pickled ginger juice* (if using sweetened pickled ginger honey may not be needed)
- 2–3 tbsp pickled ginger, minced*
- 4–6 tbsp fresh lemon juice
- 2 tbsp rice wine vinegar*
- ½ cup sesame or canola oil
- 2 tsp liquid honey, if desired
- Freshly ground pepper to taste
- ½ tsp sea salt, or to taste
To serve
1*Wasabi, picked ginger, and *Nori leaves or sheets
Directions
1Prepare the vinaigrette by shaking the ingredients together in a small jar with a tight fitting lid.
2Toss salad, drizzle with vinaigrette and garnish.
3Serve the salads with Wasabi, and pickled ginger. Use the Nori as a wrap for the greens. Roll and enjoy your sushi style salad.

I love to use freshly grated horseradish instead of Wasabi powder due to the added green food coloring in most North American Wasabi.
