Sushi Style Salad

Serves 4–6

Ingredients

  • 3 cups fresh salad greens, your choice
  • 1 cup Napa cabbage, finely chopped
  • 1 cup red cabbage, finely chopped
  • 1 Red pepper, cut into thin strips
  • 1 Avocado, cut into thin strips
  • Fresh herbs such as cilantro, parsley and sesame seeds, to garnish

Lemon Ginger Vinaigrette

Ingredients

  • 2 tsp garlic, minced
  • 6 tbsp pickled ginger juice* (if using sweetened pickled ginger honey may not be needed)
  • 2–3 tbsp pickled ginger, minced*
  • 4–6 tbsp fresh lemon juice
  • 2 tbsp rice wine vinegar*
  • ½ cup sesame or canola oil
  • 2 tsp liquid honey, if desired
  • Freshly ground pepper to taste
  • ½ tsp sea salt, or to taste
*Ingredients found in the Asian section of your grocers

To serve

1*Wasabi, picked ginger, and *Nori leaves or sheets

Directions

1Prepare the vinaigrette by shaking the ingredients together in a small jar with a tight fitting lid.

2Toss salad, drizzle with vinaigrette and garnish.

3Serve the salads with Wasabi, and pickled ginger. Use the Nori as a wrap for the greens. Roll and enjoy your sushi style salad.

As an alternative, top salads with smoked salmon, shrimp, or spicy crab.

I love to use freshly grated horseradish instead of Wasabi powder due to the added green food coloring in most North American Wasabi.
