Silken Lemon Berry Parfait w/ Limoncella drizzle

Serves 6–8

Ingredients

  • 2 x 300gr pkg.’s silken tofu, organic (strain 2 hours in a coffee filter – lined mesh sieve)
  • ⅓–½ cup freshly squeezed lemon juice
  • ¼–½ cup liquid honey or maple syrup (to taste)
  • ¼ cup organic soy, almond or rice milk, only if needed to achieve desired consistency
  • 1½–2 cups blueberries—fresh or frozen
  • 2–3 oz Limoncella, if desired (Italian Lemon flavored liqueur)
  • Zest of two organic lemons
  • Fresh mint leaves, cinnamon or cocoa to garnish

Directions

1Combine tofu, lemon and honey in a blender or processor and blend until smooth and creamy. Taste to adjust sweetness and consistency adding more honey, lemon juice or milk if desired.

2Cover and chill till for 2 hours or more.

3When ready to serve, set out 6 – 8 parfait glasses or bowls. Arrange layers of blueberries and lemon crème alternately.

4Pour Limoncella over each and garnish with lemon rind along with fresh mint and a sprinkle of cinnamon if desired.
