In a hurry yet want something yummy to eat? These croustades will win you over and be a regular go-to once you taste them. Find a great organic, sprouted bread - ideally yeast free and toast as usual or pan-grill it for even more flavor. Top with avocado, sun-dried tomato pesto and a drizzle of balsamic reduction then season with sea salt and fresh black pepper. That's it - you're good to go.
- Yield: 6 Croustades
- Prep time: 5 minutes plus toasting time
6 slices quality organic bread, gluten and yeast free if needed, Non GMO if the bread isn't organic
2 ripe avocados, cut into thin slices
1/2 cup Sun-dried tomato pesto, ideally dairy free
1 tbsp Balsamic reduction
Sea salt and freshly ground black pepper, to taste
If Desired: fresh basil leaves to garnish
- Heat up a grill or cast iron pan on medium high heat and toast all the bread slices, setting aside and keeping warm as each is done. Work quickly.
- Once you have your toast, cover each slice with avocado slices, a spoonful of pesto, a drizzle of the balsamic and season generously with sea salt and pepper. Cut as desired, garnish with basil if using and enjoy.
