CRISPY COCONUT BRUSSELS SPROUTS
Its so easy to love a pile of veggies on your plate when they taste truly great and hands-down this recipe delivers. Plus it is so easy to make, is more than company worthy and perfect for those celebratory family feasts like Thanksgiving, Christmas, Easter, Sunday Supper. (Do you still have these?  I so miss them so please feel free to invite me - I'll bring an app or side or main or sweet). Picture a happy face here.

Add this recipe to your easy weekday meal regime as well for its fast and easy and doesn't dirty many dishes.  This matters too right?  It sure does for me. And yes, left-overs are really yummy rewarmed.

CAULIFLOWER or ROMANESCO ROAST
MAIN COURSE w/ Almond Dijon Crust

Who knew veggies could be this good. (Well I did, yet won’t boast, ha ha)!
Make this your main course at Thanksgiving, Christmas, Easter, etc.  It' a perfect whole food, plant-based vegan alternative to the proverbial holiday roast beef, turkey, goose or pork. 

You are sure to win over your guests with this delish veggie roast. It's just as yummy and even more spectacular if you roast Romanesco cauliflower as shown here.
AI strongly suggest you double the dressing/marinade for it so delish and the perfect drizzle once the roasting is done.

CARAMELIZED ROASTED VEGGIES
 Even non-veggie eaters find it hard to resist these, hot from the oven, herb and garlic infused olive oil and maple syrup caressed gems.  Trust me - make them, put them on the table and simply say, these are so yummy.  Then let them decide for themselves. Chances are you'll have a recruit on your hands.  This is what seasoning foods well can do. We all want to love the food we eat feeling that "oh yum" sensation.  At least that's always my aim.

BUTTERNUT SQUASH PATTIES

 My easiest ever pan grilled vegan patty and a perfect veggie side.  Forget peeling the squash – with this method you simply roast the entire thing. The peel slips off with ease and the seeds come out with the swoosh of a spoon.
Pair these with your favorite main course and consider a side of pesto or satay sauce. Oh yum!
  • Vegetables, Side dish
  • Roast time – 40 minutes, pan-grill time approx. 6-8 minutes
  • Vegan, gluten free, Paleo                                          
  • Yield varies with squash size – approx 8 patties

SMOKEY ROASTED CAULIFLOWER

 With sexy veggies like this, I’m a self-confessed addict! If anyone else plans on getting any cauliflower I need to double/triple the recipe as my serving size is BIG.  This cruciferous vegetable is takes on flavors easily and is a nutrition power-house. So easy to prepare you’ll want to make this often. Only the roasting time demands your patience.
  • Vegetable side
  • Vegan / Gluten, Soy, Nut, Corn free
  • Prep and bake time: 5 minutes to prep, baking 25-35 minutes.

 PAN SAUTEED ASPARAGUS W/ GARLIC

Enjoy this fabulous veggie that cooks in minutes and delivers anti-inflammatory nutrients including saponins, antioxidants, Vitamin C, E, beta-carotene and minerals zinc, manganese, selenium as well as glutathione and more. While it’s not in season year round, enjoy it when you can and as a treat on special occasions. Frozen is an option yet best used in soups, purees and salsa verde in my view. You can sub in rapini. Both of these are a fabulous ‘bitter’ veggie and so good for aiding the health of your liver!

TERI’S SPICY BARBECUED CARROTS
 
Oh these carrots!  I truly think this is my favorite way to eat them now. The sexy combo of salty, sweet, spicy and sassy always wins me over. You really must make this recipe now and let me know what you think.  Can't take the heat you say? Tone that ingredient down. Spicy need not mean deadly heat.  It can simply be a little hint of intrigue to entice your taste-buds.  It's a great way to eat.
