
BITE SIZE BRUSCHETTA BASKETS

INGREDIENTS
1 Narrow organic baguette or Endive leaves for a gluten-free option
2 tbsp freshly grated Parmesan or pecorino cheese

½ cup organic sun-dried tomatoes, snipped
1/4 cup basil pesto made with olive oil
3 tbsp Maison Orphee balsamic vinegar
1/3 cup extra virgin olive oil Maison Orphee is a great brand
½ ripe avocado, diced
¼ cup red onion, finely chopped
2 tsp fresh garlic, minced
1 vine ripened tomato, chopped fine and drained well
¼ cup pitted Kalamata olives and/or capers, if desired, chopped finely
Freshly ground pepper, cayenne pepper, sea salt

INGREDIENTS
1 Narrow organic baguette or Endive leaves for a gluten-free option

½ cup organic sun-dried tomatoes, snipped
1/4 cup basil pesto made with olive oil

1 vine ripened tomato, chopped fine and drained well
¼ cup pitted Kalamata olives and/or capers, if desired, chopped finely
Freshly ground pepper, cayenne pepper, sea salt
DIRECTIONS
- Cut the baguette into 1½ inch thick rounds and press or scoop out the soft center to create a small well or hollow in each.
- Brush each with a little of the olive oil, sprinkle with chosen cheese and cayenne. Lightly toast in a hot oven or under the broiler for a few minutes. until a little crispy – watching closely. Set aside to cool.
- In a glass-serving bowl, mix together all the remaining ingredients, taste and adjust seasonings if needed and spoon the Bruschetta topping into the baskets, endive leaves or mushroom caps or make hollows in slices thick slices of cucumber or zucchini.
- Garnish and serve immediately.
TERI'S TIPS:
- Use sun-sundried tomatoes in olive oil, or rehydrate the dried version, keeping the oil or water for pasta.
- If you like food with a spicy kick, add additional cayenne pepper or minced hot peppers to taste.
- Trust you can vary the ingredients some, just be sure to taste test the mix and ensure its delish.
- Make the baskets and filling in advance if desired and assemble just before serving. They will keep 2-3 days.
