I just love the universe and how it presents us with just what we need at just the right time. This is my experience anyway and I marvel at it as well as think, "well of course this is showing up right now". 

What I'm referring to is a article that came in on my stream, caught my eye, and struck a cord prompting me to read it. Over the past few weeks I've begun several blog posts I intend to share, yet fail to get out fast enough before a new idea takes hold of me.  As a result, I have  bit of catch up to do.  OK, lots.

Today I decided, it has to be this short post for there are so many synchronicities around it and
I just love these too.

Well, this COVID-19 situation sure has impacted my food stash. How about you?
My cupboards and fridge are far from empty thankfully, yet my holdings are very diverse. Eclectic if you will. My appetite is still as strong as always however, so you can imagine how grateful I am to have food. I know not all are as blessed so let's bless them.


My story today.. I was giving a yoga class over lunch hour today and come 1h45 it was time to make something and make it quick. Thankfully cravings for particular foods aren’t an issue right now yet given it’s rather chilly today, soup seemed like a super idea. What could I whip up fast I pondered?  Hunger was hitting an 8 out of 10.  (Oh drama, I know – ha ha). Yet when I am really hungry, well lets just say I am not in my prime. Needless to say, I took to cooking and this is what I came up with.

If you are looking for a quickie, comfort meal I think I have you covered with this recipe. Let me say, you may want to know that many of my meal creations as of lately come together as I prepare them. It goes like this:

I have a longing and or an idea in mind and I start prepping. Haphazard for some I suspect yet this is me in the moment.  For this meal… with a bag of Explore Cuisine chickpea risotto on hand (I’ve wanted to make it for some time), I knew I could make dinner quickly. It was pressing 7pm,
I was feeling a growing hunger and very keen to get a meal on the table. Ever been there?
