
ROASTED BROCCOLI

When done right, it's so easy and quick to build a meal around roasted vegetables. Paired with a protein like organic edamame as shown, or green or red lentils and you have the fundamentals for dinner. On the plate: roasted, rosemary, garlic and olive oil red potatoes. Plus sauerkraut and vitamin C rich tomatoes maximize nutrient absorption.
INGREDIENTS
4 to 5 pounds broccoli - 2-3 large heads, stems included
4 garlic cloves, peeled and thinly sliced
5-6 tbsp olive oil, divided
1½ tsp sea salt
1/2 tsp freshly ground black pepper
2 tsp grated lemon zest
2 tbsp freshly squeezed lemon juice
3 tbsp pine nuts or almonds, toasted, optional
1/4 cup nutritional yeast or freshly grated Pecorino or Parmesan cheese

- Preheat the oven to 425 degrees F
- Yield : 4-6 servings
INGREDIENTS
4 to 5 pounds broccoli - 2-3 large heads, stems included
4 garlic cloves, peeled and thinly sliced

1/2 tsp freshly ground black pepper

2 tbsp freshly squeezed lemon juice

DIRECTIONS
- Cut the broccoli heads into bite size florets, trim the fibrous skin on the stems and cut into 1 inch pieces.
- Place the broccoli on a parchment lined sheet pan large enough to hold them in a single layer. Toss with garlic and 3 tablespoons olive oil, sea salt and pepper.
- Roast for 20 to 25 minutes, until tender-crisp with the tips of some of the florets browned.
- Remove the broccoli from the oven and toss with a drizzle of olive oil, lemon zest and juice, chopped nuts, nutritional yeast or cheese and serve hot.
