FULLY LOADED APPLE NACHOS –
The most fun breakfast ever!

These nachos are the easiest no-brainier breakfast or snack and can easily be adapted pending on what ingredients you have on hand. Great creative!  I always marvel at the raves I get from eaters of all ages for this simple creation. Prepare to impress your guests. (You gotta love that right!) Here’s to food lovers everywhere.
  •  Breakfast, Snack or dessert
  • Prep time: 5 minutes or so
  • Vegan, Gluten, Flour, Soy free
  • Serves 2-4
 
INGREDIENTS
 
2 organic apples, cored, halved and sliced into thin wedges
3 tbsp SunButter, thinned with hot water or non-dairy milk if needed
Organic cinnamon, to taste
1 heaping tbsp each pumpkin seeds, chopped candied ginger, cranberries or currants, granola, hemp seeds and coconut cream… as desired
DIRECTIONS:
  1. Arrange apple slices in a layered circle on a serving platter, sprinkle generously with cinnamon then drizzle with SunButter by dipping a spoon into the SunButter jar and shaking over the apples.
  2. Sprinkle chosen toppings evenly over the apple slices and finish with a tiny dollops of coconut cream if using. It’s not essential, just added yumminess.
OPTIONS: 
  
TERI’S TIPS:
  • Sub in pears or even chayote if you like. Most any sturdy fruit will work.
  • Optional toppings: coconut, cacao nibs, goji berries, organic apricot slivers (caramel heaven), dried blueberries etc.
  • Using other seed and nut butters is an option yet using SunButter makes this allergy friendly so all can enjoy. Plus it is gluten, GMO, soy and corn free.
