BUTTERNUT SQUASH n' LENTIL SOUP
 
Soup tends to be a haphazard creation in my kitchen with this one inspired by a recipe I’d seen in a magazine some time ago.  It’s one of my fondly touted crazy good recipes and has everything you need to fall in love with – sass, spice, warmth, comfort and a little of that ‘need to have more’ longing.  Thankfully it makes a large amount and if you’re smart you’ll stash a serving or two in the freezer when a 911 emergency call arrives – it’s pure, blissful and nourishing comfort food.
If you are a real Thai food fan be sure to use the lemon grass and kaffir lime leaves for they take this soup to the top in my view. Wowing our taste buds is such an act of self honoring right?

CREAMY SPICED CARROT SOUP
 
This nutrient dense, flavor intense, protein-rich main course soup is the perfect way to anti-up on your anti-oxidants. Rich, thick and wonderfully warming, it delivers a healthy dose of vitamins A, E, and iron. A perfect post-workout option with healing spices enhancing digestion (ginger), as well anti-oxidant and anti-inflammatory power (cayenne, turmeric, cumin, garlic, ginger), this is a super food.
Beyond yummy, it's immune supportive, satisfyingly addictive and so easy to make. The recipe yields a generous amount and is perfect to freeze in serving size amounts for a grab and go meal. Pair it with a simple side salad or avocado toastie and voila, an easy dinner, done.

CREAMY PARSNIP, BROCCOLI SOUP
W/ THAI BASIL (dairy free)


It’s pure, addictive, nourishing comfort food at its best and soup – savory, steaming soup in the winter or frosty cool soups in the summer are truly a must in your repertoire of recipes.  This creamy concoction just may very well hit the top of your best ten. 
 While I have a number of must make soups in my back pocket this one has taken up residence in a front pocket.  And I am not the only one to state this.   How will you know for yourself?  Pull out the chopping board, power blender and a big pot – you likely want to double this recipe for its worthy of eating a few days in a row and stashes really well in the freezer for up to a month.  Add to this the fact that there are less than 10 ingredients makes this recipe a true winner!

SPICY SWEET POTATO AFRICAN SOUP

This  truly delish main course soup is super nutrient dense and protein rich!
Enjoying this thick and warming  soup is the perfect way to anti-up on your anti-oxidants as well as a healthy dose of Vitamin A, E,  and iron.  Plus it's packed with anti-inflammatory, alkaline and anti-cancer power and we all benefit from this. Mostly, it's pure comfort!

Fitness advocates, it's a smart post workout choice with healing spices that enhance digestion enabling quicker nutrient uptake (ginger is amazing for this) as well as contributing that anti-inflammatory power  I mentioned with the cayenne, turmeric, cumin spices.
