AVOCADO SALAD
Created many years ago, this salad recipe was my quick go-to when I needed something delicious and easy to put together. As long as you have ripe avocados on hand you are set. It’s a simple creation and often this is the magic of a recipe. The ingredients are enhanced with seasoning and allowed to shine. Give it a taste test for yourself and if you don't have fresh peppers then simply serve the avocado blend over the greens alone.
INGREDIENTS
½ cup red or white onion
2 ripe avocados
2 large fresh tomatoes
½ cup cilantro
2 cloves fresh garlic, minced
½ - 1 inch jalapeno, finely chopped
¼ cup fresh lemon juice
1 tsp ground cumin
½ tsp sea salt, fresh ground pepper
2 large red peppers - cut in half down the center and seed
2 cups mixed salad greens
Garnish with additional cilantro

- Makes 4 generous servings
INGREDIENTS
½ cup red or white onion
2 ripe avocados
2 large fresh tomatoes
½ cup cilantro
2 cloves fresh garlic, minced
½ - 1 inch jalapeno, finely chopped
¼ cup fresh lemon juice
1 tsp ground cumin
½ tsp sea salt, fresh ground pepper
2 large red peppers - cut in half down the center and seed
2 cups mixed salad greens
Garnish with additional cilantro
DIRECTIONS
- Finely dice the onion, cut avocados into ½ inch dice, chop and seed tomatoes, snip cilantro and combine all these ingredients in a glass or stainless steel bowl.
- In a separate bowl, whisk the garlic, jalapeno, lemon juice and seasonings together and pour over the avocado salad tossing gently.
- Adjust seasoning to taste then fill each pepper half.
- Place each pepper on a plate scattered with a handful of mixed salad greens, garnish with cilantro leaves and serve.
