OVER NIGHT DOUBLE APPLE WALNUT OATS
w/ cinnamon n ginger
You know when you’re at the bottom of the Mason jar scraping your spoon into every nook and cranny that it’s a winner recipe. Each time I make this I find myself longing for more because it’s just that good. The secret to this recipe is the combo of organic apple juice or cider and great non-dairy milk (I have come back to Edensoy and just love it for the best quality, non-chalky non-dairy milk I’ve tasted next to home-made).
Make enough of these jars to ensure you can enjoy it a few times this week. It keep a well for about five days and is family and office friendly so be sure to label your stash just in case someone claims it for themselves.
INGREDIENTS FOR EACH JAR
½ cup organic old fashioned oats
Tiny pinch sea salt
1-2 tbsp each coconut flakes, walnuts, currants
1/2 cup each organic non-dairy milk
¼ cup apple juice or additional non dairy milk or plant based yougurt
½ tsp cinnamon, dash cloves and nutmeg
TOPPINGS - as you wish
1 organic apple, grated and topped with lemon juice
½ tsp grated ginger
Berries of your choice
Granola of your choice

DIRECTIONS:
- Measure all of the ingredients but the toppings into 12 oz mason jars in the order listed ( make as many as you wish increasing ingredient amounts accordingly).
- Layer on the toppings, cover and store in the fridge overnight for grab and go breakfasts in the morning. When ready to eat, simply dive your spoon down deep and enjoy.
- In addition to making individual jars consider prepping a big batch of the dried mixture together increasing the amounts accordingly then simply assemble individual jars the night before. In the am add grateful apples, ginger and lemon In the morning. Top as desired.
