Whether it's enjoyed stand alone with corn chips to veggie dippers or with tacos, as a filling in avocados, over sweet potatoes filled with black beans, or as a side with chili or enchiladas, salsa is a great staple to have on hand.

INGREDIENTS
3 large ripe organic tomatoes, chopped, juices drained
Juice 1 large lime, approx. ¼ cup, or to taste
1 heaping tsp garlic, minced
¼ cup red onion, minced
1/2 cup organic cilantro or parsley, snipped
1 tsp or more fresh jalapeno. minced (seeded if desired)
1 tsp chili powder and 1 tsp ground cumin, optional
Sea salt and freshly ground pepper, to taste

- Makes approx. 2 cups
INGREDIENTS

DIRECTIONS:
- Combine all of the ingredients together. Taste and adjust seasonings as desired. If its tasting a bit to spicy add a little pinch of sugar or additional tomatoes.
- Let stand 30 minutes or longer letting flavors set and serve at room temp for the best taste.
TERI'S TIPS:
- Can be refrigerated up to 24 hours – bring to room temperature before serving.
- If a smooth salsa is preferred, place ½ to 2/3 of the mixture into the blender and pulse till desired consistency is achieved.
