
SAVORY & SPICY NUT CHEESE STUFFED DATES

When you want to create a fast and impressive appetizer fast these stuffed dates are a perfect choice. Served warm is best in my view yet they are good at room temperature as well.
Create a few different varieties if you like and consider doubling the recipe if you are hosting a crowd. Extras will keep five to seven days.
INGREDIENTS:
16 soft medjool dates, sliced almost through and pitted
Approx. 2 oz cashew cheese, nut or seed butter, as desired
16 pecans, almonds, walnuts or seeds of choice
GARNISHES:
Pomegranate molasses or balsamic reduction if desired to drizzle over dates
Sea salt, fresh black pepper, cayenne, fresh herbs

- Prep time – 10 minutes, bake time 3-5 minutes
- Vegan, gluten, corn and soy-free

INGREDIENTS:
16 soft medjool dates, sliced almost through and pitted
Approx. 2 oz cashew cheese, nut or seed butter, as desired
16 pecans, almonds, walnuts or seeds of choice

DIRECTIONS:
- Heat the oven to 400°F and cover a baking pan with parchment paper.
- Stuff each of the date halves with cheese and one or two nuts then press gently to adhere then place on the prepared pan.
- Season with sea salt, and both peppers if using.
- Bake for 3- 5 minutes until heated through.
- Once heated arrange on a serving plate, garnish and enjoy while warm.
TERI’S TIPS:
- Check the international section of your grocer for pomegranate molasses. It adds a truly unique, tart, sweet taste elevating this appetizer to restaurant quality.
- Make a sweet version filling the dates with nut butter, nuts and a little piece of chocolate. Top with sea salt, cayenne and espresso powder.
- Wrap these with prosciutto before baking for meat eaters.
