CHOCOLATE CHIA PARFAIT w/ SALMON BERRIES
I was on Vancouver Island, BC visiting cousins and foraging for berries on their 18 acres of heaven when I discovered these fabulous berries. Maybe they are in my neck of Canada yet I had never seen or tasted them so this was exciting. A new discovery I foraged myself. Coveting them as I picked I knew they would become a fun new recipe and that is just what this is. Now you can sub with other berries of course yet if you have access to salmon berries enjoy them for their unique sweet and tart taste as well as the mélange of shades of orange and red. So pretty!
CHOCOLATE CHIA CEREAL BASE INGREDIENTS
½ cup organic chia seeds
2 heaping tablespoons raw cacao power
2 tablespoons organic shredded coconut
2 tablespoon buckwheat groats or hemp seeds
2 tablespoons organic currants
2 tablespoons slivered almonds or nuts/seeds of your choice
½ - 1 tsp vanilla extract
Maple syrup, honey or stevia, to taste
Pinch sea salt
DIRECTIONS
PARFAIT INGREDIENTS - for 2 servings
4-6 tbsp chia seed cereal base mix from above
Approx 1, 1/2 cups dairy-free milk, pending on the thickness you prefer
Generous pinch cinnamon, cardamom and/or ginger powder
1+ cups Salmon berries or your fave berry
GARNISH: Yacon flakes, raw cacao nibs, toasted nuts or seeds, bee pollen

- Prep Time: 5 min plus overnight soaking
- Yield: The dry mix makes approx 4 servings
- Vegan, gluten, soy, grain, corn free

- Combine all the ingredients and store in a jar using as needed.

DIRECTIONS
- For best results, assemble parfait(s) the night before by measuring 2-3 tbsp base mix into 2 mason jars.
- Pour in the dairy-free milk and mix well ensuring the seeds mix is covered.
- Cover and let it set overnight in the refrigerator.
- The next morning, you are ready to add your toppings.
TO SERVE:
- Top with the berries and garnish as desired.

- If you want this for breakfast and forgot to prep it the eve before, simply make it now and let stand 15 - 20 minutes before consuming.
