There are so many ways to make a great cookie and chocolate chips add such a taste of decadence. Especially when it’s good quality chocolate. Indulging in this you can ease up on added fats and sugars and still produce a delicious treat.
Made with gluten-free oatmeal flour, almond meal and mashed bananas, this cookie creation comes in as a healthy option. Enjoying these cookies warm is such a treat. A strong Americano is my choice. Long gone are my days of milk and cookies.

Get over the fear or guilt of consuming carbs with this protein rich, high quality-carbs loaf that is absolutely delicious. With all the food fads that fight to win your attention and the food industry tricks that triggering crappy-food addiction, it’s no wonder people are confused about carbs. And fats and protein for that matter too. When you switch to whole-foods, and mostly plant-based, whole foods, you can heal your relationship with carbs. Really!

SUMMER BERRY FRUIT CRISP - a vegan favorite


As a kid, my mom’s home-made apple crisp was always a hit for the entire family. She had a knack for stretching a dollar and infusing food with love and flavor. I have come by this food creation passion of mine thanks to her.
 
My version of fruit crisp here was inspired by the amazing crops of strawberries abundant early summer and paired with my favorite wild blueberries from Nova Scotia. Go ahead and use raspberries or blackberries if you wish and if you can get your hands on rhubarb, perfect. If you are using this fruit, add a touch of sweetness to counter the tart taste of rhubarb. Finally, make your crisp extra special by topping with a non-dairy crème like coconut whipped crème or silken lemon crème, Belsoy or non-dairy vanilla ice crème.

​BANANA WALNUT MUFFINS
 

Muffins are pure comfort food for me. They are a wonderful trek back to being a kid with my mom making amazing, home-made, love-filled treats for her six kids and my dad. She instilled a commitment in me for good food, frugality and infusing love in all of my own creations. For me, this now means making food as nutrient-dense and delicious as possible. It was boredom with breakfast, extreme cold temperatures and a need for warming, comfort food that inspired this recipe. Using a previous recipe creation as my inspiration, these muffins were born.

Sometimes food blends taste like the expression, ‘made in heaven’.
This is one of them for me. The combo of chewy, crunchy, gooey, sweet and salty with a double dose of chocolate enhanced by espresso has me sold. The plant-based crème cheese from Violife has me smitten so I doubled up my original icing recipe and adding in a touch of cashew butter too. Hail our friends that gift us with garden goods throughout the growing season. I am blessed with a handful of these dear souls and I cherish them. My first grab this year, Rhubarb! It's a fruit I truly enjoy, and fruit crisp brings me right back to childhood and my mom’s yummy apple- betty made with brown sugar, cinnamon and buttery oat topping. My version has all the appeal of my mom’s, yet I’ve reduced the sweetener, added flax seeds and replaced butter with omega three rich walnut oil.

MAPLE WALNUT ICE CRÈME– Super simple!
 
I’ve been told by all who have enjoyed this:  ‘It’s the best non-dairy alternative to ice cream’ and yes it is good for you too! Enjoy in bless-ful health – even for breakfast. RAW CACAO PECAN BROWNIES
 
Brownies have always been addictive and these are absolutely my fave now. It’s the perfect amount of sweet with a divine balance of bitter from the raw cacao and silky crème of the whipped coconut. The recipe was

COCONUT WHIPPED CRÈME
 
This vegan whip crème is absolute magical. Simply whipping the thick creme from canned coconut - full fat and organic ideally, results in an amazing faux whipped creme. Besides tasting just fabulous, the coconut cream is a healthy fat metabolizing medium chain triglyceride.  A much better choice than dairy whipping cream.

I pulled out my mini-processor, frozen bananas, both a green super food and raw cacao powder, almond butter and a splash of left over coffee from breakfast and voila - a healthy treat. One of my favorite ‘oh wow’ desserts!  A cashew cheesecake infused with orange and robed in berries! It’s rich, thick and creamy, screaming of indulgence and just begging to be enjoyed.  I have long been a fan of cheesecake yet with years of extremely little to zero dairy intake and the reality that it’s a top food allergen, I abstain.  Far be it from me not to find a delish alternative however. and that is exactly what you get with this beautiful cake.

You are in for perfect yum in every bite of this easy to make dairy-free cheesecake.  We are all familiar with the seductive warming of spices like cinnamon and ginger. Add in the sass of cloves, allspice and nutmeg… it’s so addictive. I’ve made it even more-so with the option of topping it with a coconut caramel drizzle that tempts you to eat it as is.

Food is meant to be yummy don't you agree? Whether it’s a main course, late night snack, emergency fuel or a treat just because Food is on my mind most all the time. OK, not always yet often. Really often. When I eat I am for a 'wow' and 'oh yum' experience and feel great remorse with so-so foods. This impromptu creation  came on a hot summer day when I want the cooling kiss of peppermint and they are so yummy.

 CHOCOLATE POTS DE CREME - DARK AND DELICIOUS

I am a complete push over when it comes to bittersweet, dark, creamy chocolate treats. Add a splash of booze and well, forget it, I’m sold! Yet that said I am a chocolate snob – or most discerning with my indulgences. (That’s how I like to describe my very distinct preferences for quality foods including chocolate. After all we each have our own unique taste-buds right?)

So back to this treat… it’s dark and delicious and I created it in minutes when a chocolate craving hit one eve. I’m quite certain you’ll love it and you too can appease your own palate and choose your chocolate proof (the % of cacao) and sweetness level. I went extra dark – 93% yet did add a splash of cassis. YUM!

SUPER HERO POWER BALLS OR BARS

I have taken some of my favorite ingredients from my key sponsors and melded them together for a delish, power ball or bar - fondly dubbed my Ambassador Balls.  It was a playful whim that had me obsessed with finding the right combos and I have done it. These are so good and my latest batch has a coating of maple flakes, cacao powder and ground espresso beans. OH YUM!  Chocolate is a fave of mine so I use it often yet do know a vanilla version of my Ambassador Balls in on the way.

LOVE BITES-  A love affair with chocolate!

You may love chocolate simply because it tastes amazing or because it’s so abundant in healthful properties or because high quality chocolate isn’t as caloric as its sugar-laden wanna-be versions are.   Oh yes, great news right!  Maybe you crave it for the magnesium and maybe, just maybe it’s because it’s a known aphrodisiac.  Whatever the reason, I join you in this love affair and will admit I am just about as discerning of the kind of chocolate I choose as my romantic partner.  (Smiling your way). 
It must be high quality, organic and high in cacao, 85+% is my preference.

CRAZY GOOD FOR-YOU COOKIES

Are cookies a fave in your snack regime? For me, I really love to indulge in a great cookie. It must have premium ingredients however, be just sweet enough yet not too sweet and add to my nourishment needs. This typically means I am only eating home-made cookies so recipe creations are often.
These came together when I looked at the fabulous array of fun flours from Nature’s Earthly Choice, took out my cupboard staple of SunButter, mashed some very ripe bananas and warmed the crazy good coconut oil from Maison Orphee.

I have a thing for chocolate. A very serious thing! I just adore good quality, dark chocolate and if there is a hint or even a hit of alcohol in it, I am even more in love. So yes, these truffles have a little booze in them yet of course you can opt to omit.  Vanilla is a great substitute. The ganache center of these truffles have a toasted walnut addition marrying wonderfully with the whiskey.

This is a home-run or touch down, (even orgasmic if you will); perfect any time of the year. If you add the maca root powder, paired with the chocolate it’s a mighty fine aphrodisiac. Protein and fiber rich, they are truly fabulous, two bite brownies that are so good for you they can be eaten for breakfast and even suffice as pre-work fuel with the added bonus of a little caffeine kick from the chocolate, and espresso if using.

It's perfection.  A dairy-free cheesecake that any cheesecake fan will love.  Make it for your family and friends and refrain from calling it a ‘vegan, raw’ cake and conjuring up potential prejudice in the hard core dairy addicts.   Simply call it a blueberry cheese cake and let the cake speak for itself.  Most marvel when being told it’s dairy-free after eating it and claim they wouldn’t have known.  The added bonus is this is so much easier on the gut.  Make it ahead if needed for it stores well in the freezer for a few weeks.

Cookies, who doesn’t love them!  I admit I am hooked be they soft or crunchy just not too sweet. What’s your fave style – a soft and chewy or firm and crunchy cookie?  Or do both appeal? This version I made crunchy at a friend’s request and they are a winner with all who’ve tasted them. The trick to the crunch is using sugar rather than pureed fruits, maple or coconut syrup or honey as I usually do.

 Oh yum to this fabulous tasting, easy to make, replacement for any dairy based sweet crème such as mousse, whipped crème or pudding. I love thick and creamy creations like mousse, cheesecake, yogurt, etc. yet avoid dairy so needed to create alternatives.  They nut creme is so easy to make and you can choose the nuts you prefer such as walnut, pecan, macadamia and almond. They are all yummy! A high speed blender is best to use yet not essential. While the texture won't be as creamy, the taste is still delish.
