What makes or breaks a great salad outside of starting with quality ingredients is the dressing. Having a few great dressings on hand means you can toss together even the simplest of ingredients and have them taste amazing.
Here are a few of my quick go-to blends as well as one that tends to impress when you are serving guests.
SAVORY SWEET CITRUS DRESSING
INGREDIENTS:
1 teaspoon Dijon mustard
3 tablespoons freshly squeezed orange juice, plus zest
2 tablespoons balsamic vinegar, white or dark
3 - 4 tablespoons olive oil, to taste
1 small shallot, minced fine
1/8-1/4 tsp sea salt and black pepper to taste

LEMON DIJON DRESSING
INGREDIENTS:
1 tbsp Dijon
3 tbsp fresh lemon juice
1 tsp garlic, chopped
¼ cup olive oil
1 tbsp parsley, minced
Sea salt and pepper to taste

POMEGRANATE GINGER DRESSING:
INGREDIENTS:
1/2 cup 100% Pomegranate juice
1 tbsp lemon juice
1 tsp fresh ginger, grated
4 tbsp extra-virgin olive oil
1 tsp whole grain Dijon mustard
1/4 tsp cinnamon
1/4 tsp sea salt
Freshly ground pepper, to taste

- Measure the dressing ingredients into a small jar and shake well.
- Infused blood orange or lemon oil if available
LEMON DIJON DRESSING
INGREDIENTS:
1 tbsp Dijon
3 tbsp fresh lemon juice
1 tsp garlic, chopped
¼ cup olive oil
1 tbsp parsley, minced
Sea salt and pepper to taste
DIRECTIONS:
- Measure ingredients into a blender or mix with a hand held blender for a creamy blend. Give it a taste taste and store in a glass jar whisking before use as needed.
POMEGRANATE GINGER DRESSING:
INGREDIENTS:
1/2 cup 100% Pomegranate juice
1 tbsp lemon juice
1 tsp fresh ginger, grated
4 tbsp extra-virgin olive oil
1 tsp whole grain Dijon mustard
1/4 tsp cinnamon
1/4 tsp sea salt
Freshly ground pepper, to taste
DIRECTIONS:
- In a small bowl or covered jar, combine pomegranate juice with remaining dressing ingredients. Whisk together or shake in closed jar until emulsified. Taste and adjust seasoning if needed. Shake again before using.
