CARROT CAKE POWER BALLS
Absolutely delicious! A wee bit addictive and so easy-to- make, Carrot Cake Power Balls (or Bites) are another must make! Oh sure, I agree I am biased and influenced. I have already tasted them, yet I am confident you will find them yummy and a must-make too. Everyone I have shared them with gave me the sought after - 'yummy' rating. INGREDIENTS
1 cup shredded carrots
1 cup Medjool dates, pitted
1 cup walnuts, raw
1 cup shredded coconut flakes, reserve ¼ cup for rolling, toast if desired
¼ cup almond meal or hemp seeds
2 tsp cinnamon
1 tsp ginger powder – or 1 inch ginger root, grated
½ tsp nutmeg
1 tsp vanilla extract or zest from one organic lemon or orange
Pinch sea salt or pink Himalayan salt

- Prep Time: 10 minutes
- Yield: 12-16, 1.5 in balls
- Vegan: Gluten, soy, corn free
- Suggested serving size - 2-3 balls
INGREDIENTS
1 cup shredded carrots
1 cup Medjool dates, pitted
1 cup walnuts, raw
1 cup shredded coconut flakes, reserve ¼ cup for rolling, toast if desired
¼ cup almond meal or hemp seeds
2 tsp cinnamon
1 tsp ginger powder – or 1 inch ginger root, grated
½ tsp nutmeg
1 tsp vanilla extract or zest from one organic lemon or orange
Pinch sea salt or pink Himalayan salt
DIRECTIONS:
- Measure the carrots and dates into a food processor and process until the dates break down.
- Add the remaining ingredients and continue to process until the combo clumps together. Leave some texture if you prefer a power ball with a little bit of bite. Taste and add a few extra dates or seasoning if you wish.
- Shape into balls of any size and roll in the extra coconut shreds before chilling. These will keep two weeks to 10 days.
TERI’S TIPS
- Roll the balls in various toppings if you like for added visual appeal if plating them for company.
- My favorite coatings tends to be crushed walnuts or hemp seeds and this adds extra omega 3's. Almond meal with cinnamon or nutmeg mixed in, is delish too.
- I don't recommend freezing these as of yet for I haven't tested it. With the raw carrot, there will be some texture shifts yet this likely won't impact the taste. I'll come back and edit this after I freeze some for a week.
