COCONUT SUNBUTTER GRANOLA

Granola is always a great addition to your kitchen counter 'yum' jar.
You have one right? Whether you do or don't this recipe is a must make.
It's truly one of the best I've had. Requests for the recipe are rampant and like most of my recipes it's so easy to make. Gather up the ingredients and go to it. If you have kids include them in the creation for its the best way to have your young ones engage in healthier habits. In addition, teaching them to cook is an essential skill-set. Learn together if it's not your forte. Forgo excess sugar treats and make yummy options like this high fiber, nutrient dense cereal instead.
It eats like a treat.
¼ cup ground organic flax seeds soaked in 1/3 cup water
2-4 tbsp Maison Orphee organic coconut oil, as you wish
⅓-½ cup real maple syrup or Lakanto – add ¼ cup non-dairy milk if using sugar
1/3 cup organic SunButter Sunflower butter - peanut, sugar, GMO and gluten free
1 tsp vanilla extract or powder
2 cups organic old fashioned rolled oats
(Choose gluten-free oats if desired or use equal parts of buckwheat and quinoa flakes)
½ cup raw sunflower seeds, Magnesium rich; calms nerves, relaxes muscles, combats headaches, essential for bone health…
¼ cup raw pumpkin seeds, also Magnesium rich
½ cup slivered, chopped or flaked raw almonds, omit if nut allergies exist
½ cup organic coconut ribbons/ slivers, unsweetened
2 tsp cinnamon plus 2 drops cinnamon essential oil, if desired
¼ tsp Maison Orphee sea salt
½ cups organic apricots, slivered
¼ -1/2 cup organic dried figs, currants, Goji or cranberries* or a combo
*Maple syrup or apple juice sweetened
DIRECTIONS
Enjoy as is, with your milk choice, layered in a parfait or on top of smoothie bowls. My favorite way.

- Prep time: 10 min to assemble, 30-40 to bake
- Oven 300F
- Vegan, Nut and gluten-free options
- Yield approx 4 cups or 8 - 10 servings
¼ cup ground organic flax seeds soaked in 1/3 cup water

DIRECTIONS
- Pre-heat oven to 300-325F
- Combine the coconut oil, maple syrup, flax mix and SunButter in a small pot over low heat. Warm gently and blend well. Remove from heat and stir in vanilla.
- Mix remaining ingredients in large bowl, toss well then add the SunButter mixture to the dry ingredients and stir to combine well. Pour into a shallow sided baking pan and bake for 30-40 minutes or so stirring after 15 minutes.
- Once your granola has bronzed slightly and crisped up remove from oven (it will continue to as it cools), cool and store in an airtight container.
Enjoy as is, with your milk choice, layered in a parfait or on top of smoothie bowls. My favorite way.

- Add the dried fruits after baking for a softer texture if desired.
