SPICY SWEET POTATO AFRICAN SOUP
What is better than a rich, filling soup on those cold, bone chilling days? Enjoying this rich, thick and warming pottage is the perfect way to anti-up on your immune boosting anti-oxidants as well. Adding to the wow power, it delivers a healthy dose of Vitamin A, E, and iron. Plus it's anti-inflammatory, alkaline and anti-cancer with immune boosting power.
You are sure to experience an instant 'oh yum' reaction. Note that it makes a generous amount and is perfect for freezing in serving size containers for a grab and go meals. Pair it with a simple side salad, a thick, Artisan ancient grain bread if desired and voila, an easy everyday dinner, done.
INGREDIENTS:
1 tbsp Maison Orphee coconut oil
1 large yellow onion, finely chopped
3 garlic cloves, minced
1 generous tsp fresh ginger root, minced
1/2 tsp cayenne pepper or 1 fresh chili pepper, to taste
1 tsp ground coriander
1 heaping tsp ground turmeric
1-2 tsp ground cumin, to taste
1 tbsp curry powder or curry paste, to taste
1 tsp fine grain sea salt or Himalayan salt crystals
1/2 tsp black pepper, freshly ground
6-8 cups stock or water pending on how thick you like your soups
2 large sweet potatoes, peeled and cut into 1/2-inch cubes, approx. 3 cups
1- 24oz can organic plum tomatoes, diced or crushed
1 cup red lentils or lentil trio, organic if available – Omit for Paleo
1 cup SunButter, organic (Reduce this to ½ or ¾ cup if desired yet try it with the full cup at least once, it's so creamy!)
Choose your favorite nut butter if preferred such as peanut or cashew.
1 lime, juiced
GARNISH:
1 tbsp organic sunflower seeds, toasted and lightly salted
Chopped cilantro and any veggies of your choice

DIRECTIONS:
- Heat a large stockpot over medium heat; add oil and sauté the onion until translucent then stir in the garlic, ginger and spices. Cook a few minutes longer.
- Add the stock and sweet potatoes, tomatoes and their liquid. Simmer for 25 minutes and then stir in the lentils continuing to cook an additional 15 minutes or until done.
- Stir in the SunButter mixing well to incorporate then taste and adjust seasonings and soup consistency if desired. Heat a few more minutes then stir in the lime juice.
- The soup can be pureed at this point or simply garnished and served as is. Warm bowls are a really nice touch and I suggest you accompany with a leafy green salad and quality Artisan bread if you so wish.
TERI'S TIPS:
- You can sub the sweet potatoes with butternut or pepper squash if you like. It's just as good.
- Buy organic spices to truly benefit from their healing properties.
- Add even more healing power by using certified pure therapeutic grade essentials oils such as the turmeric and ginger in place of or along with the spices.
- Like most stews and soups, this is even better after one to two days and it freezes well.
