MINT PATTIE SMOOTHIE BOWL
Ah Yes - The cooling, spirited taste of peppermint cream and the allure of chocolate in a smoothie no less!
Peppermint patties are reminiscent of my childhood. The shiny foil wrapped patties bought at the local candy store were only 5 cents. Yes that’s right, a mere nickel. They were a favorite yet now I have zero desire for such over-refined candy. A delish home-made smoothie version was needed, so I set out to recreate the cooling, minty sensation and the addictive chocolate crackle of those patties I loved. Assembling what I hoped would do just that and I came up with this almost right away. It’s fantastic. I suggest you keep your smoothie blend thick and creamy with the use of lots of ice.
INGREDIENTS
1/2 cup organic canned coconut milk
Approx 1/2 cup avocado chunks
1 cup frozen organic spinach
1 serving Ormus Greens w/ mint
1 serving Sunwarrior powder- the vanilla blend is my favorite
½ cup crushed ice, or as desired
1-2 drops food grade peppermint essential oil, optional
1 heaping tbsp cacao nibs or high quality vegan, 70+ dark chocolate/chips
Sweetener if needed, a soaked date or two, , stevia, or Lakanto
GARNISH IDEAS:
Vegan cream or coconut yogurt, SunButter, granola, cacao nibs, pomegranate seeds, mint leaves, cacao powder, matcha tea…

- Vegan, soy/nut/gluten-free - alkaline
INGREDIENTS
1/2 cup organic canned coconut milk

DIRECTIONS:
- Measure all of the ingredients into your power blender in the order above with the exception of the cacao nibs/chips and garnishes.
- Blend using the tamper to ensure a creamy mix. Once you have a thick consistency add nibs or chips and pulse just to mix throughout.
- Pour into bowl or latte cup, garnish as desired and dig in with a spoon and a satisfied smile.
TERI’S TIPS:
- If you don’t have avocados substitute with frozen banana chunks or ½ cup non-dairy yogurt. If using a sweetened version be sure taste test before adding additional sweetener.
- If the smoothie is too thick for you add more coconut milk as needed. Each brand varies in consistency.
