CHICKPEA SALAD W/ CREAMY
TAHINI DRESSING
It's just so good! Rich in protein, fiber and flavor this simple salad is simply sensational. Beans and greens are a super combo for main course salads and a perfect way to fuel your body with macro nutrients (plant-based protein, healthy fats, quality-high fiber carbs) and essential micro nutrient ingredients (calcium, iron, phosphorus, magnesium, zinc, molybdenum, vitamin B1, and selenium). CHICKPEA SALAD
INGREDIENTS:
6 cups mixed salad greens
1 cup radishes, chopped
1, 14-19 oz can organic chickpeas or 2 cups cooked
Fresh herbs of your choice such as parsley, lemon balm or chives, etc
Sea salt and fresh black pepper
DIRECTIONS:
CREAMY TAHINI DRESSING:
INGREDIENTS:
1/3 cup raw, organic tahini paste
2 small cloves garlic, crushed and minced
2+ tbsp lemon juice or apple cider vinegar, to taste
Water as needed - approx 3-5 tbsp pending on the consistency of tahini
Sea salt and fresh black pepper
1+ tsp cumin powder and pinch cayenne pepper or chili flakes (optional)

CHICKPEA SALAD
INGREDIENTS:
6 cups mixed salad greens
1 cup radishes, chopped
1, 14-19 oz can organic chickpeas or 2 cups cooked
Fresh herbs of your choice such as parsley, lemon balm or chives, etc
Sea salt and fresh black pepper
DIRECTIONS:
- Combine all the ingredients except chickpeas in a large salad bowl, toss and divide between four plates.
- Top with chickpeas and generously drizzle with the tahini dressing. Season with sea salt, pepper and fresh herbs.
CREAMY TAHINI DRESSING:
INGREDIENTS:
1/3 cup raw, organic tahini paste
2 small cloves garlic, crushed and minced
2+ tbsp lemon juice or apple cider vinegar, to taste
Water as needed - approx 3-5 tbsp pending on the consistency of tahini
Sea salt and fresh black pepper
1+ tsp cumin powder and pinch cayenne pepper or chili flakes (optional)
DIRECTIONS:
- Mix ingredients together with a hand held blender or whisk it with a fork adding water a little at a time to create a desired consistency. Taste and adjust seasonings as needed.
TERI’S TIPS:
- Use any veggies you love. I kept this super simple as I was in a rush yet you can go for any veggies you have. Truly the secret is in the dressing.
- Add Mid-Eastern flair to this salad by sprinkling with zataar and or sumac. Find these spices in the international section of your grocery store as well at mid-Eastern stores.
