SIMPLE SALSA BLACK BEAN SALAD
ONLY FOUR INGREDIENTS
This is the Easiest Ever super salad and you can make it in about three minutes. Seriously. Most of the time I am a skeptic when I see the time suggested for food preparation and I do my best not to undermine this when I state my times.
For this salad, with store-bought, clean greens, canned beans and jarred salsa the only cutting is the avocado. Even if you choose to add in the optional ingredients you are looking a making a main course meal in five minutes. Not that food prep needs to be rushed however. Take your time if you have it.
INGREDIENTS:
2 heaping cups or handfuls fresh salad greens of your choice
½ - 3/4 organic black beans, drained and rinsed
½ - 3/4 cup deli bought fresh salsa
¼ cup avocado
OPTIONAL ADD-ONS:
Fresh cilantro, roughly chopped
2 tbsp nutritional yeast, cashew cheese, hemp seeds or chopped nuts
Diced red onion
Fresh jalapeno or dried chili pepper flakes
Sea salt, ground cumin, freshly ground pepper

- Vegan, gluten, soy, corn free if desired
- Makes one large salad - make it as big or small as you like.
INGREDIENTS:

¼ cup avocado
OPTIONAL ADD-ONS:

DIRECTIONS:
- Spread greens out on large plate or shallow bowl.
- Top with black beans, salsa, avocado and add-ons if using.
TERI’S TIPS:
- Serve with organic tortilla chips or Mary’s crackers, endive leaves or stuff a sprouted grain wrap if desired.
- Make this in a large Mason jar or glass bowl with a lid layering salsa, beans, avocado and then greens. If you use any of the add-ons, layer those over the beans and finish w/ greens.
- To serve, toss in a big salad bowl.
