OVEN ROASTED POTATO BITES

Awesome, right! Roasting is a fabulous way to recreate this proverbial favorite taste of fries without the excess calories and concern of saturated and trans-fats associated with deep frying. Vary the seasonings if desired for new taste options.
INGREDIENTS
2-3 tbsp olive oil
1 tsp garlic powder or 2 cloves fresh garlic, minced
1-2 tsp dried rosemary or Italian seasoning, crushed w/ a mortar and pestle
1 tsp sea salt or to taste
1.5 pounds potatoes, unpeeled, cut into ½ cubes
Freshly ground pepper, to taste
Parsley to garnish, chopped

- Serves 4-6
INGREDIENTS
2-3 tbsp olive oil
1 tsp garlic powder or 2 cloves fresh garlic, minced

1 tsp sea salt or to taste
1.5 pounds potatoes, unpeeled, cut into ½ cubes

DIRECTIONS:
- Preheat oven to 425F.
- In large bowl whisk together the oil and seasonings. Add potatoes and toss until coated.
- Transfer to a parchment lined baking sheet and bake in oven for 25 mins turn potatoes and bake for an additional 15-20 minutes or until potatoes are crispy and browned.
- Serve immediately with a squeeze of fresh lemon juice and sprinkle with parsley.
TERI'S TIPS:
- If you are a fan of a little spicy kick blend equal parts of Sriracha with a vegan mayo or pureed avocado as a healthy whole food option to the mayo. Use for a dipping sauce or thin with a little water or vinegar and drizzle over the fries.
