DIY MUESLI MIX -
Big Batch for fast overnight parfaits

It's remarkable how food can taste so good and be so good for you! This is always my aim and I'm proud to say, 'I ace it' 
With a strong passion for yummy, easy to make and good for me food my mind is always devising artistic creations that will meet all these requirements. Yes I am almost always thinking about food and drink.
The now infamous overnight bowl sensation has it's origins in muesli  bowls. Its been around a long time and in my view it gets better and better. You're sure to love this!  It's a fabulous mélange of fiber rich, quality carbs, protein and healthy fats.


NOTE: This may seem like a lot of ingredients however you can SUB as needed using more of one nut or seed option. It's up to you. Variety is great yet ensure its' doable. Ingredients are meant to be used - use those you love most. and have on hand.

  • Breakfast/Snack
  • Plant-strong, dairy-free, sweet treat, gluten-free option
  • Prep Time – 5 minutes
  • Yield – Approx 8 servings
 
INGREDIENTS:
 ¼ cup each raw chia, hemp, pumpkin and sunflower seeds
1/2 cup buckwheat groats  and 1/2 cup organic old fashioned oats, gluten-free if preferred
1/2 cup each aw walnuts, cashews, pecans, pistachios or almond slivers
1/2 cup organic coconut flakes or ribbons
¼-1/3 cup raw cacao nibs, if desired
1/3 cup dried fruits: organic currants, apricots mulberries, golden berries, cranberries…your choice
Pinch sea salt
 
OPTIONS:
2 -4 tbsp raw organic cacao powder, 2 tbsp maca root powder, 1.5 tsp ginger powder, 1.5 tsp cinnamon,
 
DIRECTIONS:
  1. Measure the ingredients into a large glass jar with a lid or a large zip lock baggie for travel.
 
TO SERVE:
  1. Add approx 3-4 heaping tsp into a bowl/Mason jar and top with 1-1/3 cup organic non-dairy milk, coconut water or non-dairy yogurt.
  2. Let stand 15 minutes or longer, ideally overnight, then top with fresh fruits of your choice, additional nuts or seeds, and a swirl of SunButter or cashew butter, if allergies aren't an issue.  
 
TERI’S TIPS:
  • You can make this ahead in glass jars and bring with you for a meal on the go. Remember a spoon.
  • Travelling?  Prep serving size baggies and pack these in your suitcase.  Using a hotel room glass or mug, top with water or a beverage of your choice and voila, a balanced, healthy, raw and nutrient-dense delicious breakfast. 
  • I love to enjoy this warm sometimes and simply cook it up slow like the ris-oat-o then top it up with grated apple, ginger root, lemon juice, cinnamon, mulberries and a nice swirl of SunButter
  • Amp up the protein and nutrient density if desired by stirring in a tbsp or two of organic protein powder or greens powder if you don't mind interesting colored oats.
