
DIY MUESLI MIX - for overnight parfaits
It's remarkable how food can taste so good and be so good for you! This is always my aim and I'm proud to say I ace it. With a strong passion for yummy, easy to make and good for me food my mind is always devising artistic creations that will meet all these requirements. Yes I am almost always thinking about food and drink.
The now infamous overnight bowl sensation has it's origins in muesli or muesli Bircher or Budwig bowl. Its been around a long time and in my view it gets better and better. You're sure to love this! It's a fabulous mélange of fiber rich, quality carbs, protein and healthy fats.
INGREDIENTS:
¼ cup each raw chia, hemp, pumpkin and sunflower seeds
1/2 cup buckwheat groats and 1/2 cup organic old fashioned oats
1/2 cup raw walnuts, cashews, pecans, pistachios or almond slivers
1/2 cup organic coconut flakes or ribbons
¼-1/3 cup raw cacao nibs, if desired
1/3 cup dried fruits: organic currants, apricots mulberries, golden berries, cranberries…
Pinch sea salt
Options:
2 tbsp raw organic cacao powder, 2 tbsp maca root powder, 1.5 tsp ginger powder,
1.5 tsp cinnamon, organic chocolate chips

- Prep Time – 5 minutes
- Yield – Approx 8 servings
INGREDIENTS:

DIRECTIONS:
- Measure the ingredients into a large glass jar with a lid or zip lock baggie for travel.
TO SERVE:
- Add approx 3 heaping tsp into a bowl/Mason jar and top with 1 cup organic non-dairy milk, coconut water or non-dairy yogurt.
- Let stand 15 minutes or longer, ideally overnight, then top with fruits of your choice, nuts or seeds, and a swirl of SunButter or cashew butter if allergies aren't an issue.
TERI’S TIPS:
- You can make this ahead in glass jars and bring with you for a meal on the go.
- Traveling? Prep serving size baggies and pack these in your suitcase. Using a hotel room glass or mug, top with water or a beverage of your choice and voila, a balanced, healthy, raw and nutrient-dense delicious breakfast.
- I love to make this warm sometimes and simply cook it up slow like the ris-oat-o then top it up with grated apple, ginger root, cinnamon, mulberries and a nice swirl of SunButter
- Amp up the protein and nutrient density if desired by stirring in a tbsp or two of organic protein powder or greens powder if you don't mind interesting colored oats.
