PEPPERMINT CACAO CRUNCH POWER BALLS
w/ raw cacao nib crunch
Food is meant to be yummy don't you agree? Whether it’s a main course, late night snack, emergency fuel or a treat just because Food is on my mind most all the time. OK, not always yet often. Really often. When I eat I am for a 'wow' and 'oh yum' experience and feel great remorse with so-so foods. This impromptu creation came on a hot summer day when I want the cooling kiss of peppermint and they are so yummy. The amount of dry to wet ingredients varies given the thickness of the SunButter, adjust accordingly so the dough holds together.
A big bonus with these treats - they're crammed with fiber-rich plant protein, vitamins, minerals, healthy fats, quality carbs and antioxidants and Oh yes, MEGA YUMMINESS! Enjoy these Power balls without guilt.
INGREDIENTS
1 tbsp coconut oil
4 tbsp SunButter, I prefer the crunchy for this recipe yet any of them will do
2 heaping scoops vanilla or chocolate protein powder, approx ½ cup, plus more if needed
2 tbsp Ormus Greens - peppermint and 2-3 drops peppermint essential oil, to taste
1 cup organic unsweetened, shredded coconut, plus extra for rolling the balls
Pinch fine grey sea salt, to taste (great for electrolytes)
1 heaping tablespoon raw cacao nibs
Non-dairy milk, a few tbsp if needed

- Makes 8-12 inch balls
- Vegan, Gluten and Nut-Free
INGREDIENTS
1 tbsp coconut oil
4 tbsp SunButter, I prefer the crunchy for this recipe yet any of them will do
2 heaping scoops vanilla or chocolate protein powder, approx ½ cup, plus more if needed
2 tbsp Ormus Greens - peppermint and 2-3 drops peppermint essential oil, to taste

DIRECTIONS
- Mix together the SunButter and coconut oil warming if needed to make mixing easy. Then combine the remaining ingredients in a bowl excluding the extra coconut flakes for rolling and adding liquid or powder as needed to create sticky dough that holds together when rolled.
- Form the mixture into approximate one inch size balls
- Roll the balls in the coconut flakes to cover evenly, store in a covered container in the freezer enjoying as desired.
TERI’S TIPS:
- I strongly suggest making a double the batch and storing in the freezer in an airtight container (up to 3 weeks). I like to add a pinch of quality sea salt as a great way to infuse added electrolytes making them a post workout friendly snack.
- Make these chocolatey with 2 tbsp cacao powder and add a few pureed dates for added sweetness if needed
- Sub in various options for rolling such as hemp or chia seeds, cacao powder or maple flakes.
