CASHEW CRÈME PARFAIT - Dairy-free mousse
This is a fabulous tasting, easy to make, replacement for any dairy based sweet crème such as yogurt, whipped crème or pudding. Bonus: It had great alkalizing and anti-inflammatory effects.
I love thick and creamy creations like mousse, cheesecake, yogurt, etc yet avoid dairy so needed to create alternatives. They nut creme is so easy to make and you can choose the nuts you prefer such as walnut, pecan, macadamia and almond. They are all yummy! A high speed blender is best to use yet not essential. While the texture won't be as creamy, the taste is still delish.
INGREDIENTS:
1½ cups raw organic cashews soaked for 2-8 hours, drained and rinsed
Approx 3/4 cup organic coconut, cashew or almond milk (more if needed)
5-6 Medjool dates, soaked 30+ min or 4-6 tbsp raw honey or maple syrup, to taste
1 tsp vanilla extract or 1 oz cognac or Cointreau
1 tsp freshly squeezed organic lemon juice (reserve zest)
TO ASSEMBLE:
1 cup fresh berries per person
Garnish:
Chocolate curls, cacao nibs, berries, organic orange or lemon zest
DIRECTIONS:
Cashews are rich in cooper, magnesium, tryptophan and selenium. With a lower fat content than most other nuts, approximately 75% of their fat is unsaturated fatty acids. Approx 75% of this unsaturated fatty acid content is oleic acid and promotes good cardiovascular health. Studies of diabetic patients show that monounsaturated fat, when added to a low-fat diet, can help to reduce high triglyceride levels.

- Prep time: 10 minutes plus soaking time - 2-8 hours
- Makes approx 2 cups crème

- Measure ingredients into a powerful blender such as the ever so affordable Salton Harley Pasternak Power blender. Process or blend using off and on power and scraping down sides as needed until well combined and creamy. No time? See Teri’s Tip below!
- Taste and adjust sweetness and thickness if needed then transfer to a glass bowl and refrigerate for at least 60 minutes before using.
- To serve: Layer cashew crème and berries in a wine glass. Garnish as desired and savor this fabulous dessert.
- Sub in walnuts, pecans or macadamia nuts for the cashews if desired.
- Use date soaking liquid along with the milk if you prefer
- For a quick version of this crème, mix equal parts of raw cashew butter and coconut milk or any of your favorite non-dairy milks with honey or maple syrup, to taste. Add more cashew butter or coconut milk for desired consistency. Use as directed above creating a layered berry parfait.
