Are you into comfort desserts? Those reminiscent of your childhood be they home-made or from a favorite restaurant? Thick caramel sauces have long been associated as a decadent treat that instilled cravings. Yes, I too have longings for this now and again, even as an avid health advocate, which is how this recipe came to be.
Forget all those excess sugar laden caramel sauces for this easy-to-make version is so much better and needs no added sugar. The dates do it all and the vanilla or whiskey enhances the yum factor by augmenting the caramel flavor. A little maca or mesquite will do this as well and infuse even more nourishment. It's perfect with anything that needs an added flourish and ideal with the Pumpkin Cashew Cheesecake.
INGREDIENTS
½ cup date jam (To Make: Cover 1/2 cup pitted Medjool dates with ½ -2/3 cup boiling water. Let stand 20-30 minutes and then puree to a thick jam like consistency).
¼ - 1/3 cup canned coconut milk or cream (use full fat for best results and ideally organic).
1 pinch quality sea salt
1 oz. vanilla, scotch whiskey (or bourbon, rye, brandy or dark rum)

- Prep time – 5 minutes, (soak time 20-30 minutes), cook time 10-15 minutes
- Vegan, gluten free, Paleo option
- Yield, Approx. 1 cup

DIRECTIONS
- Mix together the first 3 ingredients and heat to simmer gently 10 – 15 minutes or until it has thickened.
- Remove from heat, stir in the whisky and drizzle over your favorite fruit parfait, berry crisp, brownie, cake, coconut ice cream, chia or pumpkin parfait, etc.
TERI’S TIPS:
- This is also fabulous over sautéed, flambé or baked bananas, pears, apples or pineapple!
- Make a delish vegan whipped cream by keeping a can of coconut milk like Earth's Choice in the fridge then scoop off the thick cream and beat into a vegan whip cream using a little coconut sugar or maple syrup to sweeten. Stevia and Lakanto are great options as well.
