SASSY MANGO SALSA

It's fresh, tangy, sweet, eye catching and ever so addictive! This mango salsa is great as a dip in addition to matching well with grilled and broiled fare. It can be made with papaya, pineapple, cantaloupe or melon as well as mango.
Add a minced clove of garlic if you like and really sass it up with diced avocados and tomato.
INGREDIENTS:
1 ripe mango, approx. 1 heaping cup, diced
½ cup green or red onion, finely chopped
2 cloves garlic, minced
1 red pepper, diced
1-2 tsp red or green jalapeño peppers, minced -remove seeds and pith to reduce heat
½ cup cilantro, chopped
2-3 tbsp lime juice
Freshly ground pepper, sea salt, to taste
Additional Cilantro, to garnish
DIRECTIONS:
1. Mix all ingredients together, chill for at least one hour before serving then enjoy with tortilla chips, crackers, endive and baby peppers for dipping.

- Plant-strong/Vegan, nut, gluten and dairy-free
- Makes approx. 2 cups

TERI’S TIPS:
- This can be made up to 3 days ahead; stored in a glass gar in the refrigerator. Before using, bring to room temperature.
- If you’re not a cilantro fan, make this with fresh mint. It too is a perfect pair with the mango.
- Enjoy this salsa with grilled fare or to top a beans and greens salad. It’s a perfect oil-free dressing.
