PEANUT SAUCE - the best ever

This sauce is pure gold and I don't mean the color alone. It's the taste! Absolutely delicious and you'll hear me say, addictive too. If you are anything like me when it comes to sauces (a condiment queen) then double the recipe because it fabulous on almost anything. Here you see it paired with these yummy Vietnamese Salad Rolls. The pairing is a heavenly match made in 'your own kitchen'. haha.  
See my suggestion for a wonderful peanut butter choice and whenever you can, buy organic nut and seed butters.

SUN-DRIED TOMATO CASHEW SPREAD

This dip is flavor forward, really, really addictive and readily adaptable making this recipe a must make. Enjoy this spread on crackers or a wrap, crumble over pasta and tacos or pair with the infamous avocado toast creations. Once you make this, you're sure to find your own ways to enjoy it and want to make it often. It freezes well and is a blessing to dig out of the freezer when you need a yummy cheese fix.

​CREAMY CHIMICHURRI SAUCE
 
This flavor intense, nutrient dense blend is a beauty. The herb and spice combo is powerful.  Pair it with sautéed, grilled or roasted foods or use in place of mayo, mustard or cheese. Use it as a dip for fries or thin with broth or wine and marinate tofu, tempeh mushrooms or eggplant yet keep some to serve on the side. It's perfect for Buddha Bowls and a favorite sauce of mine. So, so good!

ASIAN GINGER SAUCE    
 
Sauces are the secret to sassing up your meals and this flavor filled creation is fabulous as a marinade and sauce. It brings the ‘yum’ to your main courses and side dishes. My preference is to use organic gluten free tamari or soy-free coconut aminos. This is a milder and slightly sweeter tasting alternative to soy sauce and tamari. Like all food creations, choose what you love best. Keep this sauce on hand for quick stir-fry recipes as well as Buddha Bowls.

CASHEW PARMESAN CHEESE

If you are a Parmesan fan and have wanted a vegan version you have scored big. This cashew-parm is so good and it's made in minutes.
While it doesn’t melt like sheep or cow parmesan, it has the most delish flavor profile. It's really tempting to want to spoon this combo straight into your mouth, discipline is required! (For me anyway). Use this blend in any of your creations where you want a cheese taste.

BEAUTIFUL BASIL PESTO
 
Hail basil, one of the most beloved herbs by so many of us.  Oh yes, I am one of them, talk to me about pesto! Plus there are so many ways to make it and this version is a tasty take on traditional pesto infused with a trifecta of omega 3’s to help combat inflammation. That’s a win-win – you get yum as well as pain relief.
The alkalizing anti-inflammatory properties help overcome inflammatory pain, and muscle/joint soreness.  Enjoy this sassy sauce with your favorite alkaline protein option such as Portobello mushrooms filled with French lentils, and served over a bed of sautéed greens.

ROASTED PEPPER SAUCE –
perfect for pasta, pizza, tacos and dip
 
Oh how I adore roasted sweet bell peppers and they make for a perfect sauce when pureed with garlic, herbs, a little olive oil and sea salt. 
It’s all that’s needed for an ever-so-yummy, eat it straight out of the blender creation. Enjoy this right away with pasta, polenta, on pizza, flatbread, over roasted veggies or raw – veggie noodles of zucchini, squash, sweet potatoes and carrot, with tacos and even as a dipping sauce. It's best when freshly made.

CASHEW CACAO CLUSTERS 

This recipe was inspired during the holiday season while creating a Christmas care package for my son (and my own desire for full, taste explosions of flavor that just happen to pack healthy power). Every year I aim to come up with a few indulgent treats that mark the holidays and this year cashews and cacao nibs have been an addiction for me.
The combo of crunchy, sweet, salty and slightly bitter as well as fragrant from the spice combo is perfection and anyone can make this. All you need to do is measure, mix, bake and serve or store and then sneak into every now and again).  You are guaranteed to both love this as well as earn rave reviews from everyone you make it for.

SIMPLE SUNBUTTER SATAY SAUCE

​This is a sure fire ‘go-to’ win them all over recipe in my home as well as at workshops and cooking classes.  Besides being oh-so-easy to make and ever so versatile, its wonderfully flavor packed and adapts well to accommodate the prevailing dietary specifics.   I love it with Asian salad rolls, kebobs – be it veggie, seafood or meat; its great over greens, noodle salad or with BBQ’d or grilled meats/seafood/veggies.  You can even drizzle it onto lettuce leaf boats filled with a veggie and rice mix.

Ah cheese!  It's a favorite food for so many and when considering eating a plant-based diet most say, "But I can't give up cheese!"  Rest assured, you don't have to.  There are numerous store-bough options available and its easy to make your own.  Check out your locale health food grocers and farmers markets for numerous artisan vegan cheese options -  some are truly outstanding.  The caveat, they are often pricey so  making your own is a great solution to keeping this food option on your menu!
