
SUPER HERO POWER BALLS OR BARS
I have taken some of my favorite ingredients from my key sponsors and melded them together for a delish, power ball or bar - fondly dubbed my Ambassador Balls. It was a playful whim that had me obsessed with finding the right combos and I have done it. These are so good and my latest batch has a coating of maple flakes, cacao powder and ground espresso beans. OH YUM! Chocolate is a fave of mine so I use it often yet do know a vanilla version of my Ambassador Balls in on the way.
These are aimed for the fitness crowd looking for an energy bite that's easy to digest, low in sugar and made with low-allergen whole food protein and healthy fats. The cocoa powder delivers an energy boost making these best pre-workout or as your mid-morning or afternoon pick-me-up.
INGREDIENTS
5 tbsp SunButter, organic or crunchy
4 tbsp organic coconut flakes
3 tbsp Sunwarrior vegan collagen or protein powder – chocolate or vanilla
2 tbsp organic cacao powder
1-2 tbsp coconut oil
1 tbsp flax meal
Pinch sea salt
TO COAT:
Cacao powder, coconut, collagen or protein powder, hemp seeds, maple flakes, etc.

- Plant-Strong, vegan, gluten, soy, nut free
- Prep Time:
- Yield: approx 12 or 1, 8 x 8 baking dish for bars (8-12)
INGREDIENTS
5 tbsp SunButter, organic or crunchy
4 tbsp organic coconut flakes
3 tbsp Sunwarrior vegan collagen or protein powder – chocolate or vanilla
2 tbsp organic cacao powder
1-2 tbsp coconut oil
1 tbsp flax meal

TO COAT:
Cacao powder, coconut, collagen or protein powder, hemp seeds, maple flakes, etc.
DIRECTIONS:
- Measure all the ingredients except coating into a bowl and mix until well blended and sticking together.
- Taste and adjust texture and sweetness as desired ensuring the dough holds together when rolled. (Add more protein powder for sweetness and to stiffen to dough or coconut oil or SunButter if needed to.
- Now shape the dough into 1" balls and coat as desired. If making bars (with a double recipe) press into an 8x8 baking dish, and sprinkle topping over pressing lightly to adhere. Chill to firm before cutting into bars.
- Store in an airtight container in the refrigerator or freezer up to 1 month.
CHEF’S TIPS:
- Stir in 1 tbsp maca root powder or mesquite powder to enhance the caramel taste
- Sub the protein powder with nut, seed or oat flour if you are out of protein powder.
