TABBOULEH SALAD - GRAIN-FREE 

I am in love with this salad. So many various cultures ace combing simple, fresh and nutrient packed foods with spices, coming up with winners like this. I am confident you will love this creation for its fresh goodness at its best! And made grain/gluten-free with quinoa substituted for the bulgur FYI: Quinoa is a seed. It's classic to serve the salad with pita yet lettuce leaves are another fabulous option.

HIGH PROTEIN CHICKPEA VEG SALAD 
A main course feast


When you feel like eating something substantial and want to include lots of produce as well as flavor that satisfies this salad is a perfect fit. Its got well seasoned and filling chickpeas - one of the most well known and welcomed beans for most, heaped over a pile of leafy greens, crispy sweet carrots, vibrant purple cabbage, creamy avocado and lusciously ripe cherry tomatoes. Then its generously topped with an all time favorite tahini dressing made thick, garlicy, tart and wee bit spicy. The combo is perfect with the chickpeas and greens.

THAI STYLE MANGO SALAD
w/ TOASTED CASHEWS


When you want to impress your guests with flavor sensations, Thai food is a perfect choice. The array of spices and fragrant aromatics of this salad will have your foodie guests asking for the recipe.
Do your best to find lemon grass, Thai basil. and kaffir lime leaves for they have such a definitive 'Thai' taste. Typically the mangos are green in traditional salads yet I prefer using 'just ripe' mangos. The fat cat are best for this recipe in my experience.

FRESH BEET SALAD

Fresh or roasted, beets are like candy to me and this beautiful salad is a hit with most everyone. Paper thin slivers of beets are paired with the slightly bitter radicchio for perfect balance. The fresh herbs and micro greens along with toasted pistachios make it gourmet good with minimal effort and just a few ingredients.

AVOCADO SALAD
 
Created many years ago, this salad recipe was my quick go-to when I needed something delicious and easy to put together. It’s simple and often this is the magic of the creation. The ingredients are enhanced with seasoning and allowed to shine. Give it a taste test for yourself. I am confident you will love it.

If you struggle keeping ripe avocados on hand buy extras allowing a few to ripen at room temperature while storing the remaining in the refrigerator. As soon as you have ripe  avocados transfer them to the fridge and take a few out.  Those in the fridge will last a few days as the cold temps halt the ripening. If you keep a circular stock on hand you will always have ripe avocados ready to enjoy.

SALAD DRESSINGS - 3 FAVORITES

What makes or breaks a great salad outside of starting with quality ingredients is the dressing. Having a few great dressings on hand means you can toss together even the simplest of ingredients and have them taste amazing.

Find a few of my quick go-to blends as well as one that tends to impress when you are serving guests. Keep in mind, dressings like this are great for Buddha Bowls and as a marinade or drizzle to add flavor boost too.

CREAMY TAHINI DRESSING:

​This is a favorite dressing and dip with an addictive garlic and lemon combo. You are sure to make it a staple in your fridge discovering it pairs well with with so many foods. If you are a fan of hummus yet struggle with digestion of beans, this is sure to be a fabulous option for you.

Make this thick for a dip or spread if you like as it's perfect used this way too.  The cumin, garlic and lemon are wonderfully anti-inflammatory making this perfect for anti-inflammatory diets.

​SIMPLE SALSA BLACK BEAN SALAD - 
ONLY FOUR INGREDIENTS

This is the Easiest Ever super salad and you can make it in about three minutes. Seriously. Most of the time I am a skeptic when I see the time suggested for food preparation and I do my best not to undermine this when I state my times.

For this salad, with store-bought, clean greens, canned beans and jarred salsa the only cutting is the avocado.  Even if you choose to add in the optional ingredients you are looking a making a main course meal in five minutes. Not that food prep needs to be rushed however. Take your time if you have it.

With all the hustle bustle of life, stopping to enjoy food is a joy to embrace.

Fresh salad spring rolls are such a treat and truly come together easily. You can fill them with most anything you enjoy and use up any odds and ends on hand.  Just be sure to include some vibrant herbs such as mint, Thai basil or cilantro.  Often they are made with seafood or simply veggies alone yet these are stuffed with tempeh making the rolls hearty enough to be your main course.  Especially when drizzled with the thick Thai sauce. My suggestion is to pair them with miso soup or a mango n mint salsa.

THE RAINBOW SUPER SALAD

It's an amazing salad made with ancient grains. They are nutritional power houses abundant in vitamins, minerals and trace minerals along with most being a fabulous source of protein, healthy fats and the almighty Vitamin F - fiber.  When added to this colorful, crunchy, chewy, savory and slightly sweet salad they lend a perfect comfort food feeling you may not associate with salad. Farro is a favorite of mine yet choose whatever grains-pseudo seeds you love most and make this salad.

MY BIG FAB GREEK SALAD
WITH FAUX FETA


One of my truly favorite salads!  Yes you can choose to be dairy free and still enjoy a Greek salad. Making a vegan feta easy and so good. While there are lots of delish vegan cheese Artisans now - most are made of nuts and this feta isn't.  The marinade infuses a Greek taste into the faux feta that is so divine.  
Make this as soon as you can for I think you're gonna love it!

Vibrant, varied, voluminous and just begging to be enjoyed, this salad captures the allure with its shades of green, orange, caramel, black and white. Find the freshest produce you can and go to town with this picture perfect rainbow of colors.

HARVEST ROASTED VEGGIE SALAD

Making the most of in-season produce is the best way to eat and come the fall, squash like butternut and pepper as well as cabbage abound.  I love to use butternut in this salad and combine it with cruciferous veggie stars cabbage and kale.  Cruciferous vegetables have fabulous anticancer benefits and pack a punch of  folate, vitamins C, E, and K, and fiber. Not everyone loves kale and cabbage yet this salad always wins rave reviews and I attribute this to the love I put in my creations (smiling at you) as well as the touch of sweetness in the squash and white balsamic vinaigrette.
