
THAI STYLE MANGO SALAD
w/ TOASTED CASHEWS
When you want to impress your guests with flavor sensations, Thai food is a perfect choice. The array of spices and fragrant aromatics of this salad will have your foodie guests asking for the recipe.
Do your best to find lemon grass, Thai basil. and kaffir lime leaves for they have such a definitive 'Thai' taste. Typically the mangos are green in traditional salads yet I prefer using 'just ripe' mangos. The fat cat are best for this recipe in my experience.
INGREDIENTS:
2 medium-ripe mangos, peeled and slivered
1 sweet red bell pepper, slivered
1 cup Napa cabbage, slivered
½ cup red cabbage, slivered or shredded
1/3 cup red or Vidalia onion, slivered
1 small cucumber, ½ in julienne or long ribbons
½ cup cilantro leaves, snipped
2-3 cups leafy greens, to serve (spinach, romaine, Boston…)
GARNISH:
½ cup fresh mint leaves and/or more cilantro
¼ cup Thai basil, if available,
¼ cup toasted cashews
FOR THE SALAD:
SALAD DRESSING
1/3 - ½ cup fresh lime juice or sub with lemon juice if needed
2 stalks lemon grass, minced (soft center of stalk) or 1 tbsp organic lemon zest
1 tsp ginger root, grated
1 - 2 tbsp fish sauce or sub with tamari or coconut aminos
2-3 tsp organic cane sugar, to taste
½ -1 tsp Thai chili minced or Thai chili sauce, to taste

- Prep Time: 15 mins, roast time approx. 40 minutes, cook time 25-30 minutes
- Serves 8
INGREDIENTS:

- Gently toss the mango, pepper, cabbage, cilantro, onion and cucumber in a large bowl with the dressing.
- Line individual plates with greens, spoon salad over top, and sprinkle with toasted cashews. Garnish w/ herbs, top with the dressing and serve.

1/3 - ½ cup fresh lime juice or sub with lemon juice if needed

- Combine all the ingredients, adjust seasoning to taste, if needed, and reserve until ready to serve the salad. Toss well before garnishing and serving.
TERI'S TIPS:
- Prep the ingredients for this salad in advance and assemble just before serving. It's perfect to take on summer picnics and as mentioned, a great dish for your guests or to bring to dinner parties.
- If you are plant-based using tamari or coconut aminos are great substitutes yet the amount needed may vary. As always, be sure to taste test and adjust to suit your own taste-buds. Some of us like it tart, a bit salty and spicy and some like it sweet and sour and a little less spicy. The best part of making our own food is you get to make it just the way you like it.
