
SUPER POWER BITES w/ a touch of crunch
Holy awesome power bites! Oh so hard to resist and at the same time you’re gonna want to savor every single one of them.
Each time I make a single batch I think, “Why didn’t I double batch like usual?” Yes, they freeze well so a double batch saves time and we all know how precious this commodity is. Make these today for a wholesome treat/snack that is so satisfying.
INGREDIENTS:
1/2 cup each gluten free organic oatmeal and almond meal or use almond meal alone
1 tbsp raw cacao powder (use the code Teri to save 15%)
2 tbsp coconut oil, warmed to liquefy (use Teri15 to save 15%)
3 tbsp almond butter or coconut butter (not oil)
½ cup dates, tightly packed down
1 tbsp organic coconut sugar, optional yet it adds more caramel taste
1 tsp pure vanilla extract
Pinch sea salt – generous if you love a salted caramel taste
1 tbsp each chia seeds and toasted chopped almonds
OPTIONAL ADD-INS:
1 generous tbsp raw cacao nibs

DIRECTIONS
- Measure all the ingredients except chia, almonds and cacao nibs if using into food processor and blast until mixture clumps together. Taste and adjust texture and sweetness as desired and to ensure the dough holds together when rolled. Add a little more nut butter or dates if needed to help mixture come together and hold shape when rolled.
- Next, pulse in the chia, almonds, nibs and protein powder if using leaving a little chunky texture.
- Roll the dough into 1" balls then roll in finely chopped almonds or coconut and chill 30 minutes or longer
- Store in an airtight container in the refrigerator for up to 1 month.
