
CRAZY GOOD FOR-YOU COOKIES –
SUPER SIMPLE n GLUTEN FREE

Are cookies a fave in your snack regime? For me, I really love to indulge in a great cookie. It must have premium ingredients however, be just sweet enough yet not too sweet and add to my nourishment needs. This typically means I am only eating home-made cookies so recipe creations are often.
These came together when I looked at the fabulous array of fun flours from Nature’s Earthly Choice, took out my cupboard staple of SunButter, mashed some very ripe bananas and warmed the crazy good coconut oil from Maison Orphee. I made them while watching a family movie on my computer while Lua lay across the entire keyboard. Oh this cat! He is one of a kind. See his pictures below. He is a foster boy and part of the family.
INGREDIENTS
½ scant cup cocoa mocha, coffee, peanut or organic oat flour if not available (a blend is my favorite)
2 very ripe medium to large bananas, mashed
½ cup SunButter – crunchy or preferably organic
1 flax meal or chia egg
1 tbsp cinnamon or regular coconut oil
1 tsp vanilla extract or brandy
¼ tsp sea salt

- Prep time – 10 minutes, bake time 25-30 minutes
- Vegan, gluten and soy free, Paleo, nut-free option
- Yield: a baker’s dozen
INGREDIENTS
½ scant cup cocoa mocha, coffee, peanut or organic oat flour if not available (a blend is my favorite)
2 very ripe medium to large bananas, mashed
½ cup SunButter – crunchy or preferably organic
1 flax meal or chia egg
1 tbsp cinnamon or regular coconut oil
1 tsp vanilla extract or brandy
¼ tsp sea salt
DIRECTIONS
- Mix all the ingredients together adding a little more SunButter, coconut oil or flour if needed to create creamy, thick dough that holds its shape when dropped. Note the coffee flour is very high in fiber and may require additional moisture with extra SunButter or coconut oil.
- Plop 2 inch mounds onto a parchment lined baking sheet, shaping if needed and bake at 350F for approx 15-20 mins until springy yet still a touch soft. Cool on baking wraps and store in a glass container in the fridge or freeze.
CRAZY-GOOD CREATIVE PLAY:
- 1/4 cup raw cacao nibs or organic 75% chocolate, pieces (raw organic ideally)
- Sweetener if needed such as Lakanto drops or sugar, date or maple syrup
- 1-2 tbsp Sunwarrior Protein Powder or Collagen – note this adds sweetness
- 1 tbsp Maca root or mesquite powder or 2 tbsp cacao powder
- ¼ cup sunflower or pumpkin seeds, walnuts or, pistachios (so pretty)
- Extra SunButter to drop on top
- Protein fans - sub one half of the flour with protein powder if desired
