CASHEW CRÈME – SAVORY
This basic savory cashew crème can be used in recipes in place of cheese, sour crème or yogurt. It is really quick and easy to make - yes really. And an even quicker version is in the tips below. I love sauces and creamy texture yet don't buy animal dairy items any more and have not found a store-bought yogurt or creme with only whole food ingredients.
You can vary up the flavor of this savory creme with with fresh or rubbed dried herbs such as Provençal, Italian, coriander seeds, minced garlic or onions, their powder versions and various spices such as cayenne, curry or dry mustard.
INGREDIENTS:
1½ cups raw organic cashews soaked for 2-8 hours, drained and rinsed
Approx 3/4 cup organic unsweetened non-dairy milk, your choice (more if needed)
1 tsp freshly squeezed organic lemon juice (reserve zest), to taste
½ - ¾ tsp Himalayan salt crystals or Maison Orphee Fleur de sel, to taste

Cashews are rich in cooper, magnesium, tryptophan and selenium. With a lower fat content than most other nuts, approximately 75% of their fat is unsaturated fatty acids. Approx 75% of this unsaturated fatty acid content is oleic acid and promotes good cardiovascular health. Studies of diabetic patients show that monounsaturated fat, when added to a low-fat diet, can help to reduce high triglyceride levels.
Besides being absolutely delicious and rich in healthful healing fats, vegan cashew crème is more alkaline promoting than traditional whipped cream or yogurt. Sure it’s still an indulgence yet one to enjoy fully, leaving guilt and saturated fiber less fats behind.

- Prep time: 5 mins plus soaking time… 2 hours
- Vegan, soy, gluten free
- Yield: approx. 2 cups

Approx 3/4 cup organic unsweetened non-dairy milk, your choice (more if needed)

DIRECTIONS :
- Measure ingredients into a powerful blender such as the Harley Pasternak from Salton. Process or blend using off and on power and scraping down sides as needed until well combined and creamy. (No blender? See Teri’s Tips below!)
- Taste and adjust flavor and thickness if needed then use to replace yogurt or sour cream or transfer to a glass bowl and refrigerate to store up to 3 or 4 days.
TERI’S TIPS:
- For a quick and creamy alternative mix equal parts of raw cashew butter and almond or coconut milk or any of your favorite non-dairy milks. Add more cashew butter, milk or water for desired consistency as each of these will vary. You can sub in any of your favorite nut or seed butters.
- No time for soaking for two hours? Alternatively you can still use raw cashews. Simply soak in boiled water 30 minutes then drain.
- Add any herbs or spices you like for a flavor change-up such as dill or chives as fresh herbs and garlic powder, smoked paprika and chili powder for Latin inspired dishes.
