PUMPKIN BERRY, NUT CREME BOWL

 
Quinoa is a fabulous high protein ancient grain choice, and you can make it even better by toasting these pseudo grains before cooking. Adding in star anise, a cinnamon stick, and a few smashed cardamom pods is another great flavor and nutrient infuser. In comes quinoa flakes – it cooks up in minutes and has all the creamy comfort of oatmeal with no gluten issues. Next - the magic... if you are like me, the toppings that make this breakfast bowl shine and the caramel date jam and cashew-almond butter along with cacao nibs and nutmeg are keepers in your kitchen.

BEST EVER MORNING MAGIC MUESLI BOWL
 
I absolutely love this breakfast.
It’s not a go-to yet, every time I make it I wonder why I don’t do so more often. It’s really easy to prepare and can be mega batch prepped if you like. A few suggestions I like to make…
First be sure to choose raw, unsweetened, ingredients and unsweetened non-dairy milk and yogurt. (Organic if possible) Organic apples are a must according to 
EWG’s Dirty Dozen. 
Next, use lots of ginger and a generous squeeze of lemon juice for it really makes the flavor pop and sing!

MAPLE ORANGE NUT BREAKFAST BOWL

Another breakfast gem cooked slowly over low heat, stirred occasionally with additional water as needed. It has a thick and creamy risotto texture.  My approach is to get the oats/grains on early (often I soak overnight), and once bringing them to a boil I reduce the heat to very low, partially cover with a lid and leave for 10 – 20 mins while I shower, prep ingredients etc.

OVER NIGHT DOUBLE APPLE WALNUT OATS
 
Each time I make this I find myself longing for more because it’s just that good.  The secret to this recipe is the combo of organic apple juice or cider and great non-dairy milk (I have come back to Edensoy and just love it for the best quality, non-chalky non-dairy milk I’ve tasted next to home-made).  

Make enough of these jars to ensure you can enjoy it a few times this week.  It’ll keep well for about five days and is very family and office friendly so be sure to label your stash just in case someone claims it for themselves

​CHIA PARFAIT BASICS for parfaits

Make-ahead soaked chia seeds are a fabulous foundation for the most #yum breakfast creations. Its anything goes and I have some really delicious extras that make for the most delicious and beautiful bowls.

While optional taking a few extra minutes to make a vegan butter crème or caramel to layer with the chia pudding, fruits  and textured toppings elevates over-night chia puddings to gourmet good , guest worthy parfaits.

CACAO BANANA CHIA POWER PUDDING 

Breakfast!  It’s touted as our most important meal for numerous reasons including kick-starting metabolism after your overnight fast, enabling better brain power and stabilizing blood sugars to avoid a mid-morn crash and the often accompanying binge!  

​Besides being easy to make (best prepped the evening before) this recipe is oh-so-yummy, promotes alkalinity and can be varied to your desire.

You can change the fruits, sub in vanilla, or orange for the chocolate and change the toppings.  Because it’s so good I suggest you make a few days’ worth as well for it will keep in the fridge 3 days or so.

COCO-NUTTY PANCAKES 
Inspired by Minimalist Baker and revised or ‘teri-o-rized’!
 
While many gravitate to pancakes for breakfast it’s not a common go-to for me however these coconut pancakes along with the Buckwheat Banana and Sunbutter pancakes have won me over. You are sure to find them both really yummy and easy to make. The coconut crumble in this recipe is so good and adds a really nice addition to the pancakes. You are sure to want to make these over and over and the batter keeps well for about 3 days if you enjoy extras yet want them freshly made.

​CHEESY TOFU SCRAMBLE w/ STEAMED LEAFY GREENS

​Breakfast scrambles are a popular go-to choice for so many looking for a protein rich, warm and savory breakfast. So many of my clients looking to make the shift to eating more plant-based find this recipe to be a perfect substitute for eggs. When discovering eggs are a top food allergen for some they immediately ask for a substitute and this is it.  Like most scrambles pretty much anything goes. The key is to season your scramble. Tofu is a very plain base protein and it needs to be infused with flavor so choose seasonings you like such as those below. Other great pairs are  oregano, marjoram, basil, paprika, etc. Change it up as you wish and make this scramble often using extras for wraps, salad toppings and tacos, etc.

​BREAKFAST TORTE - tahini, molasses, cacao, and cinnamon crunch
 
There is a familiar, ‘Oh Henry’ bar memory that comes to mind with this thick, syrupy combo of tahini and molasses paired together over a toasted Ezekiel English Muffin and smothered in an avalanche sized snow storm of sesame seeds or cacao nibs and cinnamon.  Can you tell I am just a little crazy over this combo!  My body seems to crave it when the temps are cooler, and my innate wisdom is in need of a healthy serving of iron, calcium, magnesium, manganese and potassium.

A great breakfast is said to set the foundation to your day so be sure you choose something that truly satisfies your taste-buds, satiates your hunger and nourishes your body. Of course, cereal is a proverbial go-to yet most store-bought, boxed cereals barely qualify as being ‘real’ food.

The sugar content is often comparable to candy bars as well and this will only you set you up for crazy, hunger cravings the rest of the day. Take a pass on this and find a great alternative. Better still, make your own.

It just may be my favorite way of eating granola now.  While I do love my Cinnamon Coconut Granola, this bark has a crunchy cookie texture I find so satisfying in these fast paced days of big workloads and pressing demands.

CHOCOLATE CHIA PARFAIT w/ SALMON BERRIES
 
OH THIS CREATION! I was on Vancouver Island, BC visiting cousins and foraging for berries on their 18 acres of heaven when I discovered these fabulous berries.  Maybe they are in my neck of Canada yet I had never seen or tasted them so this was exciting - a new discovery I foraged myself, wow! Coveting them as I picked,I knew they would become a fun new recipe and that is just what this is. 

Sure you can sub with other berries of course yet if you have access to salmon berries enjoy them for their unique sweet and tart taste as well as the melange of shades of orange and red. So pretty!

NUTTY AND SEEDY BREAD

It started as a love affair that began in a local coffee shop called Bridgehead. I fell fast and hard and announced this love affair with abandon. Not at first however because I just wasn’t sure I wanted to share for often some locales were sold out. Then Covid hit and changed everything. Suddenly these loaves made a complete disappearance! Gone without a trace. What was I to do? I mean, who can live without such complete, exceptional love?  My only option in my view was to get creative and make my own loaves. So I did!

CHERRY CHIA PARFAIT with Cherry Compote

This beautiful parfait has a few steps yet it’s so easy to make, so yummy and it packs power in the form of calcium, omega three essential fatty acids, protein and fiber. Hail the tiny chia seed. SAVORY STEEL CUT RIS-OAT-O BOWL

Oh my ode to slow cooked oats! I just adore this belly hugging, ever so perfect comfort food and the endless creative and artist play you can have with it. This recipe makes a big batch so do reduce it if you're not cooking for a few or planning to enjoy it all week. If you are then you are good to go. Vary up your toppings each time you enjoy it.

I find when making it with tahini it has a mac and cheese  taste and giving it an Italian spin I love it with cashew butter, sun-dried tomatoes, herb infused olive oil, avocado and toasted pine nuts.  A drizzle of basil infused olive oil is so yummy too. No rules here, let your taste-buds decide.

Smoothies truly are an ideal way to jam pack all kinds of super foods into your body while enjoying a delish, almost dessert like treat. What’s ever so important to keep in mind is smoothies need to contain high fiber, plant protein and healthy fats to truly be a whole-some breakfast that will keep you satiated until your next meal.
All my smoothie recipes include quality, whole food protein, healthy essential fatty acids and quality carbs. A dairy free yogurt alternative!

Greek yogurt!! Most believe it’s a truly healthy food choice unaware of the  potential health challenges related to dairy consumption such as: digestive  challenges, allergies, inflammation, skin disorders, heart disease and cancer.
Not sure if you react to dairy? I have clients take all forms of dairy out for a week or two then re-introduce it as normally consumed. Give this a test run yourself and you'll soon know if you react this it.
For  a delicious Non-Dairy (vegan) alternative that assists with hormonal balance,  blend up a batch of this protein-rich, anti-inflammatory creamy mousse.

CASHEW CRÈME TO-GO JARS

This is a fabulous tasting, easy to make, replacement for any dairy based sweet crème such as yogurt, whipped crème or pudding.
Bonus: It had great alkalizing and anti-inflammatory effects. I love thick and creamy creations like mousse, cheesecake, yogurt, etc yet avoid dairy so needed to create alternatives.  A high speed blender is best to use yet not essential. While the texture won't be as creamy, the taste is still delish.

When breakfast can be this good you're sure to be bounding out of bed and what a super way to start any day, right?  Eager to get up along with eating truly yummy as well as oh-so-good (for you) food. I have a thing for creamy, cooling foods, yes even though I do live with winter seasons.  Paired with a hot beverage, its a perfect combo for me.  This mousse like creation truly is pie like when topped with a little crunch to mimic crust. RIS-OAT-O STYLE OATMEAL - Sweet
 
Comfort food at its best!  What is it about big, creamy bowls of foods reminiscent of childhood that take us back in time with just the thought of them?  Like Mac and Cheese or Oatmeal.  The later was a familiar food in my home growing up in Winnipeg, MB yet then we knew it as porridge.  Besides being an oh-so-needed warming sustenance for our short, albeit freezing cold walk to school in Winnipeg`s long winters, it was fast, easy and affordable for a family of 8 on one, so-so salary.

GREEN VELVET SPICE SMOOTHIE

There are some days when smooth comforting foods are an absolute necessity and at these times, frosty cool, velvety and creamy blends are my must-make.  While smoothies are most often on the menu to start my day it’s a combo like this that delivers the sense of a long held hug.  What makes it so?
