SPICY TOFU TACOS OR NACHOS
Now and again, "fun finger food' is a must and tacos and nachos are a perfect fit for this category. Go for this whole-food, plant-based version no matter who you are feeling and simply do not announce it to be this for your omnivores. Simply let them enjoy without the need to label them as vegan.
Whether they discover this or not, I am quite certain they will fully enjoy. For those of you that can't imagine nachos without stringy cheese melted all over, then do enjoy as you wish. Food is meant to be fully enjoyed. Yes, ideally nourishing as well and so if you tolerate some dairy, enjoy it on occasion, choosing organic when possible. We do well when staying grateful and nurturing a love, love relationship with self and food.
INGREDIENTS:
1, 350 gr pkg organic firm tofu or tempeh
1 onion, minced
2 tsp garlic, minced
1 scant tsp ginger root, minced
1 tsp olive oil, more if needed
1 tsp+ each cumin, chili powder, oregano and chipotle or smoked paprika, to taste
½ - 1 tsp fine grey sea salt, to taste
1-2 tsp organic Tamari sauce (gluten-free)
Approx. 1 cup salsa or more to taste
4 tbsp nutritional yeast
TO SERVE:
1 cup white cheddar or Monterey jack cheese, shredded or cashew cheese such as the NutsForCheese brand (crumbled or melted) or make this cashew cheddar cheese drizzle or this savory cashew creme.
Diced avocado or guacamole, green onions, salsa, or Pico de gala, snipped cilantro, diced jalapeno…
8 - six-inch organic corn or flour tortillas, or larger wraps such as Ezekiel sprouted tortillas for burritos and quesadillas (with additional veggie filling).

DIRECTIONS:
- Crumble or shred tofu or tempeh, set aside.
- Fry onions in hot cast iron pan on medium heat until translucent using a splash of oil or water as needed to prevent sticking.
- Stir in garlic and ginger, sautéing a few minutes before adding the spices. Let cook an additional minute or so, allowing the spices to ‘bloom’.
- Add the tofu/tempeh and sauté until it browns evenly then stir in the salsa and nutritional yeast, cooking a few more minutes reducing excess moisture from the salsa and crisp up the crumble..
- Taste and adjust seasonings if needed then begin to fill your tacos with approximately 2-3 tbsp of your tofu taco scramble, a sprinkle of cheese and any other toppings you choose.
TERI’S TIPS
- This Latin crumble is great on a salad, in a veggie wrap or as a meat alternative for chili and burritos.
- Season with Italian spices and use in lasagna and cannelloni or sub for scrambled eggs.
