
SUPER STAMINA POWER BALLS
These were one of the very first power balls/bars I made many years ago before they became a common treat. I found it so good I used it as a pie crust for a few of my raw pie and cake recipes as well. It works perfectly as balls, bars or raw crust. You don't need many ingredients yet what you do need is discipline. It's quite easy to over-indulge in these. Or is it just me? I am pretty crazy for cacao. OK, very crazy. That said, here's a cool and redeeming tip for my indulgence.... Raw Cacao is a fabulous source of anti-oxidants and minerals such as iron, calcium and magnesium (They are all essential nutrients so indulgence is justified right? Ha ha. Make them and be sure to let me know if you find them irresistible. Maybe I could have called them just that, irresistible power balls!
INGREDIENTS:
2/3 cup raw cacao powder
1½ cup almonds, finely ground (anti-inflammatory calcium rich ‘alkaline’ protein)
1/2 cup organic coconut flakes, unsweetened
3/4 cup Mid Eastern or Medjool fresh dried dates, pitted (Mineral rich source of carbs)
¼ cup Maison Orphee extra virgin organic coconut oil Gently warmed to melt.
1 tsp vanilla extract
¼ tsp fine grey sea salt (A source of trace minerals - electrolytes.)
1 – 2 heaping tsp Maca powder optional
Hemp seeds, to sprinkle bars or roll balls in (Omega 3 rich)
Optional 1 tsp vanilla extract

- Prep time - 10-12 minutes
- Makes approx. 24 balls or one 8 x 8 inch baking dish
- Raw / Vegan / Gluten, Soy and Peanut free
INGREDIENTS:
2/3 cup raw cacao powder

DIRECTIONS:
- Process cacao powder, coconut and almonds until well mixed.
- Add dates, coconut oil and sea salt; puree until mixture sticks together. If needed add a little more coconut oil or dates to adjust texture to desired stickiness and level of sweetness as dates vary in taste and moisture level.
- Shape into 1 inch balls, 2 inch patties, press into an 8 x 8 square baking dish and cut into bars or into an 8-9 inch pie plate for a raw pie crust. Roll balls/patties in hemp seeds or sprinkle bars. Chill for a minimum of one hour. For bars, cut into desired size and wrap individually in parchment paper and for a pie crust, press into pie plate and chill or freeze before filling. These need to be stored in the fridge or freezer for up to 3 weeks.
TERI'S TIPS:
- If the dates you are using aren't nice and moist, soak them in hot water 1-=15 mins then drain and use. Save the water to sweeten beverages.
- FYI Coconut oil is a med chain saturated fatty acid providing an easily digested and accessed source of energy.
