
SUNBUTTER POTS DE CRÈME AU CHOCOLAT

The best sinful treats aren’t sinful at all. Tasting totally decadent, rich, creamy and being oh-so-easy to make only add to the appeal! When dessert is essential (It is at times right?), yet health consciousness prevails this is your ideal recipe. There are no added refined sugars and its dairy, nut and gluten-free too. You only need 6 ingredients to make this magical mousse and it's a super easy recipe to double. It would make a yummy filling or icing for cake and squares and though I've not yet tested it, I think it would make great popsicles too. Let me know if you give that a try.
INGREDIENTS
1 pkg organic silken tofu, approx 350gr, drained
1/3 -½ cup Medjool date jam (soaked dates pureed into a thick paste)
1/3 cup SunButter, your favorite
1/4 - 1/3 cup raw cocoa powder, sifted
Pinch sea salt
Splash non-dairy milk as needed
GARNISH
Raw Chocolate shavings or melted chocolate drizzled over the top and perhaps even the sides of the glass (let harden) before spooning in the crème. It’s so pretty.

- Prep time: 10 mins plus approx 30 to chill
- Serves: 6
INGREDIENTS
1 pkg organic silken tofu, approx 350gr, drained
1/3 -½ cup Medjool date jam (soaked dates pureed into a thick paste)
1/3 cup SunButter, your favorite
1/4 - 1/3 cup raw cocoa powder, sifted

DIRECTIONS
- In a high speed power blender or food processor (the results won’t be as creamy), blend all of the ingredients except the garnish until creamy and mousse like.
- Scrape down sides of your blender or processor occasionally and add a splash of non-dairy milk if needed, blend once again until it’s well incorporated. Now enjoy a taste test adding more of the date jam if needed.
- Once ready, divide into four stemmed glasses or small mason jars and chill until ready to serve.
- Garnish as desired - more chocolate is always great, and if you like finish with a drizzle of brandy or espresso as a gourmet-good finishing touch.
- I like my pudding rich and decadent and use 1/3 cup of the cacao powder. If you like it less intense stick with 1/4 cup.
