CHIA PARFAIT, CHERRY COMPOTE n MORE
This beautiful parfait has a few steps yet it’s so easy to make, so yummy and it packs power in the form of calcium, omega three essential fatty acids, protein and fiber. Hail the tiny chia seed. Made into a thick and creamy pudding all you need to do is choose your desired partners to match it up with.
Here I’ve made an easy tart cherry compote, date jam and almond crème (also calcium rich). All of these are made with just a few simple ingredients and they are great in so many food creations. Now gather up the needed ingredients and run with this. The caveat, you need some time for soaking ingredients. BASIC CHIA PUDDING INGREDIENTS
1/2 chia seeds
1 tsp vanilla extract, optional
Approx 2 cups dairy-free milk + more if needed
Pinch sea salt
DIRECTIONS
SIMPLE DATE JAM
INGREDIENTS:
1 packed cup medjool or Iranian dates, pitted
Approx 2/3 cup hot water

No need to clean out the blender, just use it to blast your lemon crème.
LEMON ALMOND CRÈME
INGREDIENTS:
1 cup raw almonds soaked in hot water 6-12 hours, rinsed and drained
2 tbsp maple syrup or 2 tbsp date jam – recipe above
2/3 cup non-dairy milk
2 tbsp fresh lemon juice
Pinch sea salt

BASIC CHIA PUDDING INGREDIENTS
1/2 chia seeds
1 tsp vanilla extract, optional
Approx 2 cups dairy-free milk + more if needed

DIRECTIONS
- Measure all the ingredients into a large jar with a cover and mix well ensuring the chia seeds are completely covered. Let it set in the refrigerator 20 minutes or overnight. Now you can use this pudding any way you like. You may want to add a touch of sweetener such as stevia date or maple syrup.
SIMPLE DATE JAM
INGREDIENTS:
1 packed cup medjool or Iranian dates, pitted
Approx 2/3 cup hot water
DIRECTIONS:
- Place the dates in a large mason jar and cover with water. Allow to soak 30 minutes then puree in a blender to create a thick jam like texture. I like to add a pinch of sea salt and 1 oz brandy.
TERI’S TIP:

LEMON ALMOND CRÈME
INGREDIENTS:
1 cup raw almonds soaked in hot water 6-12 hours, rinsed and drained
2 tbsp maple syrup or 2 tbsp date jam – recipe above
2/3 cup non-dairy milk
2 tbsp fresh lemon juice
Pinch sea salt
DIRECTIONS:
- Combine the almonds, syrup or date jam, milk, lemon juice and sea salt in a high speed blender and whirl on high until well blended into a thick, smooth crème. You may need to scrape down the sides. Chill until needed.
- The crème can be refrigerated for 3 – 4 days in a covered glass container.
CHERRY COMPOTE
INGREDIENTS:
2 cups organic tart cherries, fresh or frozen, pitted
1 tbsp date jam, recipe above
DIRECTIONS:
- In a small saucepan over medium heat, heat cherries and simmer 10 minutes or so until heated through. Smash a few of the berries and stir in date jam. Turn off heat and let cool.
- Store in a mason jar in the fridge and use within a week as desired.
ASSEMBLING THE PARFAITS
GARNISHES: fresh berries, nuts or seeds, coconut, cacao nibs, etc.
DIRECTIONS:
- Choose pretty stemmed glasses and begin with a spoonful of the cherry compote, then a few tbsp chia pudding, followed with more compote, the lemon crème, date jam, chia pudding and one last spoonful of compote.
- Garnish as you wish and sit down with your favorite warm beverage enjoying this consciously. It deserves your full attention and appreciation. Mmm!
