
RAINBOW SUPER SALAD
Do you have carb-a-phobia? Well it’s time to forget quality carb fears and return to including quality ancient grains to your meal line-up.
We are truly on target passing on the over-consumed, refined and non-organic or GMO grains dominating breakfast, lunch, dinner and even snacks. Ancient grains on the other hand are nutritional power houses abundant in vitamins, minerals and trace minerals along with most being a fabulous source of protein, healthy fats and the almighty Vitamin F - fiber. When added to this colorful, crunchy, chewy, savory and slightly sweet salad they lend a perfect comfort food feeling you may not associate with salad. Farro is a favorite of mine yet choose whatever grains-pseudo seeds you love most.
INGREDIENTS:
¼ - 1/3 cup quality olive oil, to taste
4 tbsp white balsamic vinegar
1 small shallot, minced
Sea salt and black pepper, to taste
1-1 ½ cups cooked farro or your favorite Ancient Grains
1 medium bulb fennel, slivered
2 cups sturdy leafy greens: romaine, watercress, baby kale…
1 cup red cabbage, slivered or grated
2 large carrots, grated
½ cup peptias/pumpkin seeds
2 large organic oranges, sectioned, plus zest and any juices
GARNISH:
Fresh spicy micro greens or sprouts, if desired and toasted coconut or coconut bacon

- Serves 4-8
- Prep time: 10 minutes plus grain cooking time
INGREDIENTS:

GARNISH:

DIRECTIONS:
- Toss all of the ingredients in a salad bowl and mix well. Taste and adjust vinaigrette and seasonings if needed.
- Serve in regular bowls or plates or for a spectacular presentation spoon the salad in the ‘leaf’ bowls from a whole cabbage or radicchio head or the oblong boats from Nappa cabbage.
- Great add-ins options are sun-dried olives or capers and a few tablespoons mulberries, currants, apricots or dried figs, slivered.
- I use the food processor for slivering and shredding. It's super fast.
