It's Friday early eve and day two of my quarantine post my Aruba trip where my son got married to his sweetheart and celebrated his 30th birthday. We were blessed all of the celebrations went off fabulously considering the world as we knew it was changing with the pandemic spread of the Corona Covid-19 virus. With humble gratitude we are all home safe.
Being on my own and attending to matters at hand a Friday familiar ritual called to me. This being Pizza and a movie. On a whim I decided I would test out a home-made crust creation and video taping as well. Call me crazy - it won't be the first time. This video is very amateur the pizza creation turned out quite well. A complete recipe to be uploaded once I can recreate my crust with the addition of spinach. Now it’s a staple for me and I usually have both a stash in the fridge as well as the freezer. Home-made is best of course and I have such fun playing around with recipes and adapting the legumes I use, the veggies and spices I add in. In addition, I find various toppings to add that extra something – this is essential in my view. It makes for a perfect last minute appetizer as well and hey, you gotta love having both a proverbial favorite for your guests as well as something that’s good for them too.
