SMART SNACKING MADE SUPER EASY

I am an eater, a snacker, a foodie and a healthie!
Yes, full disclosure. eating really good food, really often is a habit I am very okay with.

Like most, I often juggle time challenges. Likely not as demanding as some - (I just spent a few weeks with my son's family and my 9 month old grandson is insistent on walking and resistant to sleeping. This kept all of us hopping, most all of the time and preparing food and eating was something we did as time permitted.) 

As someone accustomed to eating regularly, having a cache of ideas as well as stock on hand is essential. Below are some of my easy to make, go-to creations I think you will love. If you have favorites let me know. Let's inspire one another.

The first picture at the top, shows a nicely seasoned smashed avocado. All you need to do is mash a nice, ripe avocado with good quality sea salt, garlic powder, lemon juice, smoked paprika and black pepper. A touch of cayenne is great too. Enjoy as shown in the picture above or with crackers and veggie crudities, top your favorite toasted bread, baked potatoes, nachos...

In the second picture above - the base is Mary's Crackers I've arranged the same way you might with tortilla chips for nachos. I've topped them with a generous drizzle of tahini paste/butter, the swirled black-strap molasses all over, finishing with a sprinkle of raw cacao powder and sea salt.  This snack is an addictive combo and it delivers essential minerals including magnesium, manganese, calcium, iron, copper and potassium. When you need a pick-me-up, it's perfect. Plus its a good source of fiber.

Another favorite that can be made sweet or savory are crispy toasted coconut ribbons. They are a must make.

Both the sweet version, Crispy Coconut Crunch (pictured above) made with @sunbutter mixed with maple syrup, flax and oatmeal as well as the savory, spicy and smoky Coconut Bacon Bits seasoned with tamari, maple syrup and smoked paprika. They are a perfect hand to mouth snack. You will want a permanent stock stashed in your cupboard.
 

Next to the Crispy Coconut Crunch are sliced, @sunbutter and Cacao nibs filled Rehydrated Figs. This snack comes together in minutes and can be made well in advance.  If you are on the go, simply press two halves together creating a mini, sandwich cookie you can take with you.

A fan fave for so many years, these little gems above are what I call BANANA BUTTER BITES Easy and fun for kids to make, they taste like little dream bites of yum.

What you need...
  • A perfectly ripe yellow banana (peel and chop overripe bananas, freeze for smoothies)
  • Your favorite nut or seed butter like JEM from Raw Elements Inc or #nutfree SunButter Sunflower Butter (The image shows organic Jem Chocolate Hazelnut butter)

Toppings:
Sea salt Maison Orphée
Chili flakes
Cinnamon, organic raw cacao powder and/or nibs from #miski
Enjoy these right away or freeze in a covered container.

Below is a summer favorite most anytime yet especially after a workout. What you ask? My  Watermelon Cranberry Cocktail 
This is a simply, so good blend of fresh watermelon with a splash of real cranberry juice (it's quite tart) along with a pinch of sea salt and lemon slices to garnish.

I can easily carry this post on and on and on yet I will leave it here for now and create another one in the next few weeks. This way I get it out before the weekend you can stock up on needed ingredients and get snacking.
