They truly want to. Every client, friend and colleague is sincere in their intentions. The trouble erupts with the demanding, over-committed pattern of life in our present world. Even our growing number of retirees state their days are overly booked and the 'I'm so busy' proclamation is ever buzzing about. We are all so BUSY and meal management is seemingly impossible. We must figure out strategies around this and I have a few.
Nachos while thick organic tortilla chips are the standard go-to I love to use roasted potato rounds.
- Start by cutting them into thin rounds, soaking in water for 20 minutes, draining and drying then seasoning with olive oil, garlic and chili powder, smoked paprika and sea salt.
- Lay out in a single layer over a parchment lined baking pan. Bake for 30 - 40 minutes, turning after 20 minutes until crispy and browned.
- Once done, top with a spoonful of salsa, a spoonful of the scramble, nutritional yeast or a vegan cheese then bake another 10 minutes or so. Enjoy with guacamole on the side if you like and a generous sprinkle of cilantro.
Use this scramble for a fun Mexican Taco Salad, as a topping on pizza or filling for these quesadillas or tacos.
