When it comes to eating better, having a few go-to recipes that are easy-to-prepare and easy-to-vary with creative meal making is crucial. With most loving fun food like tacos, nachos and pizza this Latin Scramble can be enjoyed as is or in numerous ways like this favorite version of nachos as described below.

Use this scramble for a fun Mexican Taco Salad, as a topping on pizza or filling for these quesadillas or tacos.

- Start by cutting them into thin rounds, soaking in water for 20 minutes, draining and drying then seasoning with olive oil, garlic and chili powder, smoked paprika and sea salt.
- Lay out in a single layer over a parchment lined baking pan. Bake for 30 - 40 minutes, turning after 20 minutes until crispy and browned.
- Once done, top with a spoonful of salsa, a spoonful of the scramble, nutritional yeast or a vegan cheese then bake another 10 minutes or so. Enjoy with guacamole on the side if you like and a generous sprinkle of cilantro.
